How to choose good quality broken rice
- Choose broken rice that is opaque white, without musty smells, and not mixed with other types of rice.
- To cook delicious broken rice correctly, you should buy either the expanded broken rice or fragrant broken rice depending on personal preference.
- You should go to reputable stores or supermarkets and choose rice with clear origin and packaging to buy good quality broken rice.
How to choose fresh, clean, and safe pork
- You should choose pork that is light pink or light red, with fat that is ivory white, meat surface dry, and skin soft.
- Good pork has a certain elasticity when pressed, the meat fibers are firm, not too hard or too soft, and fresh pork will have a distinctive aroma.
- Additionally, you should choose pieces of pork that have separate fat and meat but are tightly attached to each other, making it hard to separate by hand.
- Avoid choosing pork that is pale or blackish, has an unusual fishy smell, with fat and meat separated, and especially if you touch it, yellow fluid will leak out.

How to Prepare Steamed Broken Rice

Rinse the rice and cook it
The broken rice you bought should be rinsed with water a few times to clean, then soak in water for about 1 – 2 hours to soften the rice.
Next, prepare the steamer pot (or steamer tray), add water to the pot and place it on the stove, layer a piece of pandan leaves in the steamer, cover the pot, and cook on high heat until boiling.
Then, add the soaked rice to the steamer, use chopsticks to create small holes in the middle of the rice to allow steam to escape, cover again and reduce the heat to low, steaming for about 15 minutes.
After 15 minutes of cooking, open the lid, gently fluff the rice with chopsticks for even cooking, pour about 50ml of boiling water over the rice to ensure the grains cook soft and not dry, cover the lid again and cook for another 10 minutes.

Prepare the pork
Cut the lean pork into thin slices about 1/2 finger length, then wash thoroughly several times with water until clean and let it drain.
Next, use a paper towel to dry the piece of meat completely, then use a meat mallet to pound each slice thinner. To allow the meat to absorb the seasoning when marinating, after pounding the meat, use a fork to poke into the piece of meat to make it softer and tastier.
Tip: If your family doesn’t have a meat mallet, you can use a knife to pound the meat.

Marinate Grilled Ribs
You put the prepared pork into a bowl, then you marinate the meat with 3 tablespoons of brown sugar, using your hands to massage it thoroughly so that the sugar is evenly absorbed into each piece of meat, and place it in the fridge refrigerator to marinate for about 10 minutes.
Next, you add the ingredients into a multifunctional blender to make the marinade sauce including: 1 bulb of garlic, 1 small red onion chopped, 1 piece of ginger smashed and minced, 5 green onion tops chopped, 1 chili pepper with some seeds removed, 5 stalks of lemongrass smashed and chopped, 5 sprigs of coriander, then blend the mixture until smooth.
Transfer the blended mixture to a bowl and add 2 tablespoons of soy sauce, 1 tablespoon of lime juice, 1 tablespoon of chili powder, 1 tablespoon of five-spice powder, 2 tablespoons of dark soy sauce, 1 teaspoon of salt, 1 teaspoon of ground pepper, 1 tablespoon of fish sauce, and mix well.
Once the meat has marinated in sugar for the appropriate time, take it out of the fridge and add the prepared marinade sauce, gently massaging the sauce onto each piece of meat, then place the marinated meat into the fridge to marinate for an additional 1 – 2 hours.

Grilling the meat
You dissolve 1 tablespoon of honey and 1 tablespoon of warm water in a bowl, using another bowl for 1 tablespoon of sesame oil.
Once the meat has marinated for enough time, place it on the electric grill, grilling at high temperature until the meat is just cooked, then dip it again in the marinade sauce, grilling for an additional 1-2 minutes.
Finally, you spread a layer of diluted honey and a layer of sesame oil on the surface of the meat, grill for another 1-2 minutes, and then you can take the meat off the grill!

Making Fried Pork Fat
Green onions you buy should be washed clean and then chopped finely. The pork belly should be rinsed with diluted salt water to clean, then the skin should be removed and sliced thinly.
You place a pan on the stove, add 3 tablespoons of cooking oil, cook on medium heat until the oil is hot, then add the pork belly and stir-fry for about 3 – 5 minutes until slightly burnt at the edges, then add 1/2 teaspoon of salt, continue to stir for about 3 – 5 minutes until the pork belly is golden and shrinks.
Finally, you add the chopped green onions into a bowl, then add the fried pork fat from the pan and 1 teaspoon of sugar, mix well until the green onions are cooked, and it is complete.

Final Product
Serve the steamed broken rice on a plate, add a little crispy pork fat on top of the rice, a piece of fragrant grilled meat, a bit of cucumber as a side, and a little sweet and sour fish sauce to enjoy this broken rice dish.
