Prepare the Chicken Breast
Wash the chicken breast thoroughly, then place it in a pot along with 3 shallots, lime leaves, and sliced ginger.
Next, pour water over the chicken until submerged and add 1/2 spoon of salt, then cover the pot and place it on the stove to boil. During the boiling process, use a spoon to skim off the foam.
Boil the chicken for about 7 – 8 minutes, then turn off the stove and let it sit covered for about 15 minutes. After 15 minutes, take the chicken out into a bowl, remembering to keep the chicken broth.

Shred the chicken into strips. Note not to shred it too small as it will break apart when stir-frying.

Prepare and Marinate Chicken Breast
Wash the chicken breast, remove the skin and fat, then rub it well with 1 tablespoon of salt and the juice of 1/2 lime for about 7 – 10 minutes to reduce the smell.
Then, marinate the chicken breast with 2 tablespoons of fish sauce, 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, and 1 teaspoon of honey in the refrigerator for about 15 – 20 minutes.

Steam and shred chicken breast
Next, steam the marinated chicken breast with 2 shallots, 5 fresh lemongrass stalks, 1 piece of ginger, a few lime leaves, and a little seasoning powder for about 20 minutes.
When checking that the chicken breast is cooked, take it out bowl and soak in ice water for about 5 – 7 minutes, wait for the chicken breast to cool down, then put it in the refrigerator for about 15 – 20 minutes for it to firm up and be easier to shred.
