Chicken breast 450 gr (filleted) Small ginger 1 piece Shallots 4 pieces Lime leaves 6 pieces (optional) Garlic 1/2 bulb Lemongrass 1 stalk Chili powder 1/2 tablespoon (if you want the dried chicken to have a nice red color, it is recommended to use Korean chili powder) Five spice powder 1/4 teaspoon Fish sauce 3 tablespoons Annatto oil 1 tablespoon Salt/brown sugar a little

How to Prepare Dried Chicken

  • Prepare the Chicken Breast

    Wash the chicken breast thoroughly, then place it in a pot along with 3 shallots, lime leaves, and sliced ginger.

    Next, pour water over the chicken until submerged and add 1/2 spoon of salt, then cover the pot and place it on the stove to boil. During the boiling process, use a spoon to skim off the foam.

    Boil the chicken for about 7 – 8 minutes, then turn off the stove and let it sit covered for about 15 minutes. After 15 minutes, take the chicken out into a bowl, remembering to keep the chicken broth.

  • Shred the Chicken

    Shred the chicken into strips. Note not to shred it too small as it will break apart when stir-frying.

  • Chicken simmering

    Add 1 bowl of chicken boiling water into a pan. Then, add 1/2 tablespoon of chili powder, 3 tablespoons of fish sauce, 1/2 tablespoon of five-spice powder, 1/2 cup of minced lemongrass, a bit of minced onion and garlic, 1 tablespoon of brown sugar, and 1 tablespoon of annatto oil, and stir well. When the mixture boils, add the shredded chicken.

    Stir-fry on high heat and continuously mix until the chicken is dry.

Chicken breast 1 kg Kaffir lime leaves 100 gr Fresh lemongrass 5 stalks Ginger 1 piece Shallots 2 bulbs Garlic 1 bulb Lime 1/2 fruit Dried chili 100 gr Curry powder 1/2 teaspoon Five-spice powder 1 teaspoon Honey 1 teaspoon Annatto oil 3 tablespoons Fish sauce 3 tablespoons Cooking oil 2 tablespoons Common spices a little (salt/ sugar/ seasoning powder/ monosodium glutamate/ seasoning powder)

How to make Dried Chicken with Kaffir Lime Leaves (Recipe shared by a user)

  • Prepare and Marinate Chicken Breast

    Wash the chicken breast, remove the skin and fat, then rub it well with 1 tablespoon of salt and the juice of 1/2 lime for about 7 – 10 minutes to reduce the smell.

    Then, marinate the chicken breast with 2 tablespoons of fish sauce, 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, and 1 teaspoon of honey in the refrigerator for about 15 – 20 minutes.

  • Steam and shred chicken breast

    Next, steam the marinated chicken breast with 2 shallots, 5 fresh lemongrass stalks, 1 piece of ginger, a few lime leaves, and a little seasoning powder for about 20 minutes.

    When checking that the chicken breast is cooked, take it out bowl and soak in ice water for about 5 – 7 minutes, wait for the chicken breast to cool down, then put it in the refrigerator for about 15 – 20 minutes for it to firm up and be easier to shred.

  • Making the seasoning sauce

    Place a pan on the stove, heat 2 tablespoons of cooking oil over medium heat, then add garlic to sauté until fragrant and quickly stir in some dried chili for aroma. After 5 minutes, add lemongrass to sauté until fragrant and then remove it.

    Next, add 1 teaspoon of five-spice powder, 3 tablespoons of annatto oil, 3 tablespoons of fish sauce, then add 7 – 8 tablespoons of chicken broth, and another 3 tablespoons of sugar, stir well, bring the mixture to a boil, and let it cool.

  • Marinate and stir-fry shredded chicken

    Mix the shredded chicken breast with the seasoning sauce thoroughly, then place it in the refrigerator to marinate for about 1 hour.

    Place a non-stick pan on the stove, add the marinated chicken and stir-fry constantly until the chicken is completely dry.

  • You should choose chicken breast pieces with white skin, as these are larger chickens with firmer and tastier meat, while young chickens tend to have softer meat.
  • If you buy skinless chicken breast, observe the layer of fat on the chicken; if the fat is white, the meat will be tastier.
  • Avoid choosing pieces of breast with many white streaks; the more streaks there are, the less fat and protein, and the meat will be harder to absorb seasoning when cooked.
