- You should choose beef hearts that are bright red or dark red, with a smooth, shiny, and soft surface, the heart membrane sticking to the myocardium, and when pressed, it feels elastic with a little fresh blood fluid oozing out.
- Do not buy beef hearts that are soft and mushy, with yellow fluid between the heart membrane and myocardium, have a rancid smell, are unusually large, dark purple, dark-colored, or pale, with a rough surface, bruising, or ooze when pressed.
How to choose good beef liver
- Choose liver that is bright red or pink, with an even color. To buy fresh liver, you should buy whole livers. Good liver is even, beautiful, without deformities, and without nodules.
- Do not choose liver that is dark or yellowish, with uneven color because those are livers that are not fresh, have been stored for a long time, or are sick.
How to prepare Black Dried Beef

Prepare the ingredients
Put the liver and heart of the beef into a bowl and add a little warm water, 2 – 3 tablespoons of salt to soak for 2 minutes.
After soaking, rinse several times with cold water until the water in the bowl is no longer red, which means the blood has been completely removed. Let the liver and heart drain.
Use a knife to make several cuts on the surface of the papaya, then soak it in a bowl of water to remove all the sap, afterwards wash it clean, peel it, cut it in half, remove the seeds, and cut off the bitter core before shredding it into long strips.
Peel the carrot and shred it into long strips like the papaya. Pick the bad leaves from the Vietnamese coriander, then wash it clean.
Note: After shredding the papaya and carrot, soak them immediately in diluted salt water, adding a few ice cubes to keep the papaya and carrot white and crunchy. -
Making black dried beef sauce
Take a bowl and add 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, 2 tablespoons of soy sauce, 1 tablespoon of palm sugar, 1 teaspoon of garlic powder, 1 teaspoon of ginger powder, 1/2 teaspoon of pepper, 1 teaspoon of chili powder, 1 teaspoon of onion powder, 1/4 teaspoon of cinnamon powder, 1/4 teaspoon of star anise powder, 1 tablespoon of honey. Then mix the mixture well.
The liver and heart of the beef, after draining, you slice them thinly and place them in a plastic bag. Next, add all the mixed spices into the plastic bag and use your hands to gently massage to allow the spices to soak evenly, marinate for about 1 hour.

Stir-frying black dried beef
Heat some oil in a pan, add 1 tablespoon of minced garlic and sauté until fragrant. Next, gradually add the beef heart and liver into the pan to stir-fry on high heat.
You stir-fry until it gets charred, then pour the remaining sauce from the plastic bag into the pan. Occasionally turn the heart and liver over to allow the sauce to soak evenly.
Simmer the beef heart and liver for about 20 minutes until the liquid in the pan has evaporated and the dried beef turns black. During the simmering process, continue to turn it over and keep the heat slightly above medium, not too high. Then reduce the heat and let the beef heart and liver dry a bit.

Roasted Sesame
Wash the white sesame seeds thoroughly and let them drain.
Roast the sesame seeds in a pan over low heat, stirring constantly for 2 – 3 minutes or until the sesame seeds turn brown, shiny, and you occasionally hear popping sounds or a few seeds jump up.
Tip: If you don’t want to roast them in a pan, you can place the sesame seeds on a tray and bake them at 175 degrees Celsius for 8 – 15 minutes, depending on the size of the seeds, or until you see the seeds turn light brown.

Baking Dried Beef
After roasting the sesame seeds, sprinkle them over the dried beef; you can add more or less than 100g of sesame depending on your preference.
Next, place the dried beef in the oven to bake for about 4 minutes at 200 degrees Celsius.

Making Papaya Salad
In a bowl combine 2 tablespoons of dark soy sauce, 2 tablespoons of soy sauce, 1 tablespoon of red vinegar, 3 tablespoons of sugar, 3 tablespoons of water, 2 tablespoons of pho dipping sauce, and a little roasted sesame seeds.
Heat a pot and add 1 tablespoon of sesame oil, and sauté 2 minced garlic cloves until golden and fragrant. Pour all the seasoning mixture into the pot and cook until the ingredients dissolve and blend together. Boil for about 1 minute and then turn off the heat, letting it cool.
Place the papaya and carrot on a plate, cut the Vietnamese coriander, add the dried beef, and sprinkle peanuts on top, you can adjust the amount to your liking. Add ground chili to the plate according to your spiciness preference, then pour the cooked seasoning over it.
