How to choose good pork butt

  • The color of good meat is bright pink, neither too red nor too pale. Pork that has a pale color, turns green, and smells bad is spoiled, so you should avoid this type of meat.
  • Pork that is firm and has high elasticity is good meat. You can test it by pressing your finger into the meat; if it bounces back immediately, is not slimy, and does not leak water or juices, it’s good.
  • For this sour salted meat dish, you should choose lean meat.

How to Prepare Sour Cured Meat

  • Prepare the Meat

    After purchasing 500g of pork butt, rub it clean with salt, rinse it with water, and then place it in a colander to drain.

    Tip:

    • To eliminate odors and make the meat cleaner, you can also briefly boil the meat before preparation.
    • Another useful tip is to add a little white wine to the water when blanching the pork. The wine is very effective at removing unpleasant odors.

    Use a knife to cut the meat into pieces about the thickness of a finger.

  • Marinate the Meat

    Put the meat in a bowl with 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, then mix well and add 150g of rice bran and continue to mix thoroughly.

    Lay 8 guava leaves at the bottom of the glass jar and then add the marinated meat.

  • If you have opened the sour meat, you should use it all at once or keep it in the refrigerator’s cool compartment for another 3 days; keeping it too long will cause the meat to leak water, losing its original delicious taste.
