Ingredients for Cooking Braised Catfish with Banana and Tofu For 2 people
Catfish 400 gr Short bananas 4 fruits White tofu 2 pieces Shallot 1 bulb Fresh turmeric 1 bulb Green onion 100 gr Cooking oil 2 tablespoons Fish sauce 1 tablespoon Rock sugar 50 gr (1 small piece) Common seasoning a little (sugar/salt/MSG/seasoning powder/pepper)
How to Choose Fresh Ingredients
How to choose fresh catfish
- Fresh catfish are always those that are still alive, moving actively, with an intact body free of injuries, bruises, or strange white spots.
- You should choose catfish that are moderately sized, with a uniform body size from the body to the tail for more meat, usually about the size of a wrist.
- It’s better to buy catfish from fishermen who have just returned from fishing, as it is the freshest, or from reputable live fish stores to ensure quality.
How to choose delicious, guaranteed green bananas
- To make the dish tastier, you should not choose ripe bananas or overly green bananas; instead, opt for mature, green bananas.
- Select banana bunches that are dark green in color, with firm, shiny, evenly curved fruits. If there are slight yellow spots, that’s even better; these are fresh bananas that have not been treated with chemicals.
How to choose delicious tofu
- Good tofu has a slightly milky white color; if the tofu has a yellowish tint, it usually contains gypsum, and the yellower it is, the more gypsum it contains.
- Choose tofu that looks fluffy and crumbly, not hard, with sides that are not too square; this indicates tofu without gypsum.
- Pure tofu has a light, characteristic aroma, while tofu containing gypsum often has a pungent lime smell.
- You can buy tofu at markets and supermarkets, or you can try making it at home following the recipe from TasteVN.
How to Cook Grilled Eel with Banana and Tofu
-
Prepare Ingredients
To remove the slime and fishy smell, briefly dip the eel in boiling water for about 1 – 2 minutes, then use a knife to scrape off the slime and remove all the internal organs.
Rub salt onto the skin of the eel, then rinse with clean water, drain, and cut the eel into pieces about the thickness of a finger.
Next, marinate the eel with 1 tablespoon of fish sauce, 1/2 teaspoon of salt, and 1 teaspoon of seasoning powder. Then, finely chop fresh turmeric, and crush the shallots, adding a little turmeric and shallots to marinate with the eel for about 20 minutes.
Cut the bananas by trimming both ends, peeling them, and then cutting them into small bite-sized pieces. To clean the dirt, wash the tofu with water, drain, and then cut it into bite-sized pieces, before frying them in a pan with oil over a stove.

Stewed fish
First, add 1 spoon of cooking oil to the pot and heat it, then add the minced shallots to sauté until fragrant. Next, add the eel and stir-fry briefly until it firms up, then add the chopped green bananas and pour in enough water to cover the fish.
Continue to boil until the fish absorbs the flavors, the fish meat becomes firm, and the bananas are just cooked, then add the fried tofu. Next, add 1 teaspoon of MSG, 1 teaspoon of pepper, and a small piece of rock sugar about the size of your thumb, then season to taste. After that, turn off the heat and add the chopped green onions.
