Prepare the mackerel
When you buy mackerel, cut off the fins, gills, clean the intestines, and wash the fish with 1 tablespoon of salt to eliminate the fishy smell. Rinse the mackerel thoroughly with cold water and let it drain.
Next, place the mackerel in a bowl and add 1 tablespoon of fish sauce, 1 teaspoon of salt, 1/2 teaspoon of pepper, and marinate for 10 minutes to let the fish absorb the seasoning.

Wash the bulb onion, peel it, and then crush it.

You place a pot on the stove and add 2 tablespoons of cooking oil, then heat it on low flame. When the oil is hot, you add smashed shallots and sauté until fragrant for about 1 minute, then gently stir in the mackerel.
