  • Prepare the ingredients

    To remove the fishy smell from the mackerel, wash the fish with white wine for about 5 minutes, then rinse thoroughly with water a few times and let it drain.

    Effective and simple ways to eliminate fishy smell

    • Method 1: Soak the fish in diluted salt water for 5 – 10 minutes, then remove and rinse with water and let it drain.
    • Method 2: Mix a few tablespoons of vinegar into water, then soak the fish for about 5 minutes. After that, remove, rinse with water, and let it drain.
    • Method 3: After cleaning, soak the fish in rice washing water for 15 – 20 minutes, then remove and rinse with water.

    Wash and drain the tomatoes, pineapple, and okra. Cut the tomatoes into wedges, slice the pineapple into fan-shaped pieces about 1/2 finger thick. Cut off the ends of the okra and then cut it into small pieces.

    Wash the green onions, chop them, and keep the green parts separate.

    Soak the tamarind in a bowl with warm water for about 10 minutes and strain to extract the tamarind juice.

  • Marinate the fish

    Put the fish into a bowl and marinate it with the green onion tops, 1 spoon of pepper, 1 spoon of sugar, 1 spoon of salt, and 1 spoon of seasoning powder.

    Mix well and marinate the fish for about 15 minutes for the flavors to absorb.

  • Cook the sour mackerel soup

    Place apot on thestove, add 1 tablespoon of cooking oil and heat it up, then add the fish and stir-fry for about 3 minutes.

    Next, add 1 liter of boiling water to cook the fish for about 5 minutes. Then add okra, pineapple, and tomatoes, stir well while seasoning with 2 tablespoons of sugar, the tamarind juice, 1 tablespoon of fish sauce, and 1 teaspoon of monosodium glutamate.

    When the water comes to a boil, taste and adjust the seasoning to your liking, sprinkle with green onions and ground pepper, and turn off the heat.

    Tip:

    • To give the soup a beautiful red color, you can sauté the tomatoes along with the fish.
    • Cooking the soup with boiling water will help reduce the fishy smell.
    • You can add a few fresh chili peppers if you like it spicy; the spiciness not only enhances the dish’s flavor but also helps eliminate the fishy smell.
