How to Choose Fresh and Delicious Quail

Prepare Ingredients
To clean and deodorize the quail, remove any remaining feathers, then wash thoroughly with salt and alcohol. Rinse under clean water 2 – 3 times to ensure it is completely clean, then drain in a basket.
For the honey leaves, remove the leaves and discard any damaged ones. Peel the onions and garlic, then wash everything thoroughly.

Prepare the marinade
You put the cleaned onion, garlic, and mac mat leaves into the blender and blend until smooth, then transfer to a bowl.
Then, you gradually add 1/2 pack (20gr pack) of five spice powder, 1 teaspoon of star anise powder, 1 tablespoon of oyster sauce, 2 tablespoons of annatto oil, 2 tablespoons of ketchup, 1 tablespoon of chili sauce, 1 tablespoon of fish sauce, 1 tablespoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, and 1 tablespoon of honey and mix well with the blended mixture above.

Marinate the quail meat
You add the mixed marinade to the quail meat, mixing well by hand to help the quail absorb the spices faster.
Then, you place the quail that has been evenly mixed with spices into a container and let it sit for about 30 minutes to 1 hour so that the quail absorbs the flavor and will be more delicious and fragrant when roasted.

Roast the quail in the oven
First, line a sheet of parchment paper and arrange the quails on the baking tray, then use a brush to apply oil on the surface of the quail meat to prevent it from drying out.
Next, roast the quails for the first time for 15 minutes at 190 degrees Celsius. After 15 minutes, turn the quails over and roast them for another 10 minutes at 180 degrees Celsius. At this point, add a few remaining honeycomb leaves into the oven and spread them evenly over the surface of the quails.
Finally, turn the skin side up and roast for another 5 minutes until the quails are cooked.
Note:- To maintain stable heat in the oven, you should preheat the oven to 180 degrees Celsius for 10 minutes before placing the quails in to roast.
- Each time you roast, brush more oyster sauce and honey for crispy skin and to prevent drying.
