- Select quails with light pink skin, slightly bright in color, with a natural fragrant smell without any foul or strange odors.
- Choose those with a large breast, thick back, thick and firm belly skin, and feel heavy when lifted.
- Avoid buying quails with dark skin, clearly visible blood spots, meat that is not elastic, slimy, or with pale green or dark purple flesh.
How to Prepare Fried Quail with Fish Sauce

Prepare the Ingredients
Wash the quail thoroughly with water; to remove the smell of the quail, soak it in a bowl with water mixed with 1 tablespoon of salt and 1 tablespoon of vinegar for 10 minutes.
After that, take the quail out and rinse it with clean water and let it drain.
Tips for Cleaning Quail and Removing Odor
- First, use tweezers or a gas torch to completely clean the feathers of the quail.
- Next, add a few slices of fresh ginger into the diluted saltwater bowl and wash the quail for about 5 minutes.
- Then rinse the quail with water about 2 – 3 times until clean, and it’s ready to be prepared.
Lemongrass is washed and minced. Ginger is peeled, washed, and sliced thinly.
Wash the lime leaves and then cut them into small strips.
Shallots and garlic are peeled and minced. Cut the lime in half and squeeze out 1 tablespoon of lime juice.

Processing quail
Put the quail into a pot to boil along with half of the minced lemongrass and sliced ginger, boil for about 15 minutes until cooked, then take it out, rinse with cold water and let it drain.
Next, put the quail into a bowl and marinate with 1 tablespoon of seasoning, 1 teaspoon of monosodium glutamate, and 1 tablespoon of lemon juice. Wear gloves and massage well so the quail absorbs the seasoning!
Then, you heat a pan on the stove on medium heat and add 100ml of cooking oil to the pan, when the oil is hot, add the quail and fry until golden and crispy on both sides, then take it out onto a plate to drain the oil.

Making the sauce.
You can reuse the pan used to fry the quail, place the pan on the stove, turn on the medium heat and add onion, garlic, and the remaining lemongrass to sauté until fragrant.
Then season with 4 tablespoons of fish sauce, 4 tablespoons of sugar, 1 tablespoon of monosodium glutamate, and 1 teaspoon of five-spice powder.
Cook until the seasoning dissolves, then add the quail and stir for 10 – 15 minutes for the flavors to absorb, taste and adjust seasoning to your liking, then turn off the heat.
