How to Choose Fresh Beef
- For stews or braised dishes with beef, you should choose cuts like tenderloin, brisket, and tendons…This is the best part of the cow, interspersed with fat, meat, and tendons. When eaten, you will feel the tenderness, the fattiness of the fat, and the delicious crunch of the tendons.
- You should prioritize selecting pieces of beef that are bright red with white marbling and yellowish fat, with soft, small muscle fibers that do not look too smooth.
- If you press gently on a good piece of beef, it should feel firm and have good elasticity, without feeling sticky or emitting any unpleasant, abnormal odors.
- You should avoid buying pieces of beef that are pale green or dark red, with dark yellow fat, that have white spots on the muscle fibers, and that feel mushy and slimy to the touch.

How to Choose Fresh Carrots
- Fresh carrots should be of moderate size, with a long, tapered shape towards the tail, smooth skin, feel firm in hand, and slightly hard.
- Select carrots that are bright orange, with fresh green tops firmly attached to the root.
- Avoid choosing carrots with wilted tops, bruised stems, slimy spots, or dark blemishes, and that feel soft when pressed.
- Do not choose overly large carrots with thick tops and shoulders, as these are older carrots that will have more fibers and less nutrition.

Prepare the ingredients
To remove dirt and odor, when buying beef, you should rub it with a little salt and white wine for about 15 minutes, then rinse several times with water and let it drain.
Use a knife to cut the beef into bite-sized pieces.
How to clean beef properly, without odor
- Method 1: Roast a small piece of ginger until cooked, then peel the outer skin, pound it finely, rub it evenly around the beef and rinse it again with water.
- Method 2: Soak the beef in white wine for about 15 minutes, then rinse it under cold water.
- Method 3: Boil a pot of cold water, then blanch the beef for about 3 minutes, remove and rinse with cold water.
- Method 4: Roast a shallot until dry, then peel, pound finely, and marinate it with the beef.

Peel the carrots, wash them thoroughly, then cut the carrots into bite-sized pieces.
Wash the ginger, peel it, and then chop it finely. Peel the shallots and mince them. Wash the lemongrass and slice it. Peel the onion.
Pick the coriander, dill, and basil, removing any old or wormy leaves (if any), then wash them thoroughly several times with water and let them drain.

Marinate the beef
Marinate the beef with 1 pack of seasoning sauce, 1.5 tablespoons of sugar, 1 tablespoon of fish sauce, 1 teaspoon of monosodium glutamate, a little pepper, and half the amount of lemongrass, ginger, and minced shallots.
Mix well and place in the fridge refrigerator, marinate for about 4 hours or overnight for the beef to absorb the spices.

Beef Stew
Place a pot on the stove, add 2 tablespoons of cooking oil and heat it up, then add 1 teaspoon of annatto seeds and fry over medium heat until the oil turns a beautiful orange color, then remove the annatto seeds.
Next, add the remaining lemongrass, minced shallots, and ginger to sauté until fragrant, then add the beef and stir-fry over medium heat for about 5 minutes until the meat is browned.
Then, pour in 1.5 liters of fresh coconut water and 1 onion into the pot, cover, and continue to simmer the beef for about 40 minutes until the meat is tender.
After 40 minutes, remove the onion, then add all the carrots, 1 teaspoon of seasoning, 1 tablespoon of fish sauce, and 1 tablespoon of sugar, and simmer for another 10 minutes until the carrots are soft and the water in the pot comes to a boil again.
Prepare a bowl of about 200ml of water mixed with 2 tablespoons of tapioca flour. When the beef stew is boiling, add the tapioca water, pouring it in while stirring continuously until the liquid in the pot reaches the desired thickness, then taste and adjust the seasoning before turning off the heat.

Final Product
Scoop the beef stew into a bowl, use scissors to cut cilantro, basil, and a little fresh chili on top, and decorate it nicely to finish.
The beef stew, when completed, has a color and aroma that is extremely enticing.
