Prepare the ingredients
Pork should be washed with diluted salt water and then rinsed clean with water, drained, and cut into small bite-sized pieces using a knife.
Peel the carrot and onion, wash them clean, and dice them. Wash the chili, chop it finely (if you like it spicy, feel free to increase the amount of chili).
Soak the tofu skin and wood ear mushrooms in water for about 15 minutes, then rinse them clean with water and cut into strips.

Boil the brown rice noodles
Boil 300ml of water over medium heat; when the water is gently boiling, add the washed brown rice noodles along with 1/2 tablespoon of cooking oil into the pot and cook for about 7 – 10 minutes.
To prevent the noodles from sticking together, after cooking, place the noodles in a bowl of ice water for about 3 – 5 minutes, then remove and drain.

Place a pan on the stove, turn the heat to medium, then add 1 tablespoon of cooking oil and heat until boiling. When the oil is hot, add the onion and stir-fry for about 2 minutes until the onion becomes tender.
Add 50ml of water to the pan and stir well with the onion until the onion is slightly charred, then add the carrot, green chili, and wood ear mushrooms to stir-fry until cooked.

Tip: Adding water in 3 stages will help the carrots cook tenderly, eliminate the pungent smell, and prevent them from becoming mushy on the outside.When the vegetable mixture boils and the pork is cooked, season with 1/4 teaspoon of seasoning powder and 1/4 teaspoon of salt, then stir-fry for about 3 more minutes until the meat is cooked through, then turn off the heat.
Check the seasoning one last time for taste, then serve the vegetable and meat mixture on a plate, along with brown rice noodles to complete the dish.
