Pork 100 gr (pork shoulder) Dried brown rice noodles 80 gr Dried tofu skin 35 gr (tofu sheet) Onion 1 bulb Dried wood ear mushrooms 10 gr Chili 2 pieces Ice cubes a little Cooking oil 1.5 tablespoons (or olive oil) Common seasoning a little (Salt/ seasoning powder/ ground pepper)

  • You should choose pork pieces that have a light pink or light red color, with the fat slightly off-white, the surface of the meat dry, and a characteristic aroma.
  • Good pork will feel firm and have good elasticity when touched; if you press it and release, the piece of meat will return to its original state without being indented.
  • Additionally, choose pork that has distinct fat and meat parts, but they must be tightly attached to each other and not easily separated by hand.
  • Avoid choosing meat that has a pale color, a shiny surface, feels slimy when touched, and especially has an unusual fishy smell due to being stored for too long and not well-preserved.
  • Moreover, do not choose meat that has separated meat and fat parts with yellow liquid oozing out, as this is meat raised with lean meat enhancers, which is unhealthy.

How to prepare Brown Rice Noodles Salad

  • Prepare the ingredients

    Pork should be washed with diluted salt water and then rinsed clean with water, drained, and cut into small bite-sized pieces using a knife.

    Peel the carrot and onion, wash them clean, and dice them. Wash the chili, chop it finely (if you like it spicy, feel free to increase the amount of chili).

    Soak the tofu skin and wood ear mushrooms in water for about 15 minutes, then rinse them clean with water and cut into strips.

  • Boil the brown rice noodles

    Boil 300ml of water over medium heat; when the water is gently boiling, add the washed brown rice noodles along with 1/2 tablespoon of cooking oil into the pot and cook for about 7 – 10 minutes.

    To prevent the noodles from sticking together, after cooking, place the noodles in a bowl of ice water for about 3 – 5 minutes, then remove and drain.

  • Stir-fried vegetables

    Place a pan on the stove, turn the heat to medium, then add 1 tablespoon of cooking oil and heat until boiling. When the oil is hot, add the onion and stir-fry for about 2 minutes until the onion becomes tender.

    Add 50ml of water to the pan and stir well with the onion until the onion is slightly charred, then add the carrot, green chili, and wood ear mushrooms to stir-fry until cooked.

    Next, add 1.5 bowls of water (rice bowl) and stir-fry for 5 minutes until the water is evaporated. Add another 1.5 bowls of water, stir well until the water reduces, then add 1/2 teaspoon of ground pepper for aroma.

    Continue to add another 1.5 bowls of water, stir well until the water evaporates, then add all the pork and fried tofu along with 1/2 bowl of water and stir-fry over high heat.

    Tip: Adding water in 3 stages will help the carrots cook tenderly, eliminate the pungent smell, and prevent them from becoming mushy on the outside.

    When the vegetable mixture boils and the pork is cooked, season with 1/4 teaspoon of seasoning powder and 1/4 teaspoon of salt, then stir-fry for about 3 more minutes until the meat is cooked through, then turn off the heat.

    Check the seasoning one last time for taste, then serve the vegetable and meat mixture on a plate, along with brown rice noodles to complete the dish.
