Preparing the potatoes
Peel the potatoes, wash them clean, and slice them thinly to about 0.2 mm.
How to peel potatoes without browning
- After peeling, immediately soak the potatoes in a bowl of cold water or water mixed with a little salt. However, with this method, you should cook them right away; otherwise, the potatoes will lose their flavor and become bland.
- You can also soak the peeled potatoes in cold water mixed with a little vinegar. This method significantly reduces the formation of black spots.
- For potatoes that have already browned, you can briefly boil them with a bit of fresh milk. This method can eliminate the formed black spots and give the potatoes a fragrant smell of milk.

Cook the butter mixture
First, place a pot on the stove and add all the prepared butter to melt it over low heat. Add the minced garlic and cook together for about 1 minute. Then, add the cornstarch to the pot, followed by salt and pepper, and whisk until the mixture is smooth.
-
Add fresh milk
Gradually add the milk to the pot while cooking and bring to a boil. Continuously stir the sauce until it thickens, which takes about 2 – 3 minutes.
-
Mixing cheese
Remove the sauce pot from the stove and add 1/2 cup of prepared cheese, stirring well until the cheese melts.
-
Mixing potatoes
Add the sliced potatoes to a large bowl, then add the cheese sauce, cornstarch, and cooked milk, mixing well so that the potato slices are evenly coated with the sauce.
-
Baking the dish
Transfer the mixed potatoes to a microwave baking tray and sprinkle the remaining cheese on top. Cover the tray with aluminum foil and place it in the oven at 180 degrees Celsius.
Bake for about 130 minutes, then check the tray; continue baking for another 30 – 45 minutes until the potatoes are soft and the sauce has a beautiful golden brown color, then remove from the oven.
