Yellow tube pasta 200 grams Sea crab 1 piece Processed pork sausage 100 grams Pork belly 400 grams Mint 50 grams (dọc mùng) Tomato 100 grams Sour fruit 3 pieces Chopped shallots 15 grams Annatto oil 1 teaspoon Turmeric powder 1/2 teaspoon Common seasoning 10 grams (salt/fish sauce/seasoning powder/sugar/MSG/oil)

How to prepare Crab Cake Noodles

  • Prepare the noodles and other ingredients

    Turn on the stove to boil 1 liter of water, when the water boils, pour in 200 grams of noodles to cook, adding 1/2 teaspoon of salt.

    Wait for the water in the pot to boil again, stir well so that the noodles do not stick together and cover the pot, turn off the heat and let the noodles sit in the pot for about 5 minutes.

    After 5 minutes, the noodles will be cooked and soft, stir the noodles well, then pour them into a colander and rinse with cold water. Mix the noodles with 1 teaspoon of cooking oil so that the noodles do not stick together.

    Peel the mint leaves, cut them diagonally, and massage with salt for about 30 seconds.

  • Make the crab cake

    Put the cooked crab meat, fish paste, 2 teaspoons of seasoning, 1 teaspoon of minced shallots, 1 teaspoon of annatto color, 1/3 teaspoon of salt, 1/2 teaspoon of pepper, and 1 teaspoon of fish sauce into a bowl, mix well to combine the ingredients and make it more chewy and delicious.

    Take another bowl, add the pork ribs, add 1 teaspoon of fish sauce, 1 teaspoon of monosodium glutamate, and 1/2 teaspoon of turmeric powder, and mix well to absorb the flavor, marinate for 15 minutes for the pork ribs to soak up the seasoning.

    Tips for preparing sea crabs

    • Live sea crabs will be difficult to clean and prepare, you should put the crabs in the freezer until they are cold or soak them in ice water for about 1 hour. This way, the crabs will become stiff from the cold, making it easier for you to prepare them.
    • Flip the crabs over, lift the apron under their belly, and use a sharp knife to poke straight into the concave area under the crab’s belly until the legs and claws are fully extended, wait about 5 minutes for the crab to die completely.
    • Remove the bindings to thoroughly clean the crabs. You should use a brush and scrub the crabs under running water. Remember to pay attention to the areas with the most algae on the crab, which are the two sides of the abdomen, so scrub this area carefully.
    • After cleaning the crabs, put them in a pot and steam for about 20 minutes until cooked, then remove the crab shell and separate the meat.

  • Cook the broth

    Place a pot on the stove, turn on the heat to warm the pot, then add 2 tablespoons of cooking oil, add 10 grams of minced shallots and sauté until fragrant, then add the marinated pork ribs and stir-fry until browned.

    Add 1.5 liters of water to the pot, bring to a boil, skim off any dirty foam, then lower the heat and simmer for 1 hour until the ribs are tender.

    Then, turn the heat up to bring the water back to a boil, use a spoon to shape each crab cake, and slowly drop the crab cakes into the pot, waiting for them to cook and float to the surface.

    Next, add the chopped tomatoes and peeled starfruit, and cook until the water boils again.

  • Seasoning

    Season the broth with 1 tablespoon of monosodium glutamate, 1/3 tablespoon of salt. Finally, add the pre-processed mint (Vietnamese cilantro) along with a bit of chopped green onion and coriander into the pot, stir well, and then turn off the heat.

    When eating, put the boiled noodles into a bowl, ladle the prepared broth over the noodles until they are submerged, and add a few slices of chili to make the dish more appealing!

How to Prepare Sausage Noodles

  • Prepare the Ingredients

    Boil a pot of water, add 1/2 teaspoon of salt, and blanch the carrots and peas for about 3 – 4 minutes.

    Bring about 250ml of water to a boil, then add the noodles to cook and add 1/2 teaspoon of salt.

    Wait for the water in the pot to boil vigorously again, stir well to prevent the noodles from sticking together, cover the pot, turn off the heat, and let the noodles sit in the pot for about 5 minutes.

    After 5 minutes, the noodles will be cooked and evenly soft, stir the noodles well and drain in a colander, no need to rinse with cold water. Add a little cooking oil to prevent sticking.

    Slice the sausages thickly as shown.

    Remove the seeds from the tomatoes and dice them.

    Add the German sausages to the pot with 1 teaspoon of unsalted butter, and stir-fry until browned.

    Add the peas, diced carrots, and tomatoes, and stir-fry continuously for 3 minutes.

    Then pour 350ml of water into the pot and stir well, then add the noodles. Bring to a boil, then season with 1 teaspoon of salt, 1 teaspoon of seasoning powder, and 1 teaspoon of sugar to suit your family’s taste, then turn off the heat.

Tips for choosing delicious sea crabs

  • Based on the color of the skin between the joints on the crab’s claws, if this skin is pink-red or dark pink, the crab has a lot of meat. Newly caught crabs will have smooth and shiny skin, indicating they are fat; conversely, crabs that have been kept for a long time will have wrinkled skin.
  • Gently squeeze the abdomen; if it feels firm, the crab is solid. Conversely, if it feels soft, the crab has little meat and is likely spoiled.
  • Squeeze the thigh area of the swimming paddle, below the shell: squeeze gently; if you feel the crab wriggling all over the paddle and claws, the crab is still strong and its meat is delicious. Conversely, if the crab is weak and about to die, it will not be fresh anymore.
  • You should not buy crabs around the full moon (15th of the lunar month) because this is when crabs molt, refuse to eat, and are likely to be spoiled (little meat).
