Ingredients for Rib Noodle Soup For 4 people

Pork ribs 3 kg Kohlrabi 300 gr Onion 80 gr Carrot 300 gr Fat mushrooms 100 gr (or straw mushrooms) Garlic 10 gr Shallots 30 gr Lemongrass 40 gr Green onions 5 gr (about 3 stalks) Lemon 1 fruit Chili 10 gr Fresh coconut water 250 ml Star anise 2 gr

How to choose good pork ribs

  • You should not choose ribs that are too small. Because small ribs usually come from small pigs, so the meat will not be of good quality due to being sold early.
  • For this dish, you should choose ribs with a little fat so that the broth has a rich and appealing flavor.
  • In addition, you should choose ribs that are bright red, not too pale or too dark. Especially ribs should not have a foul smell or be leaking fluids.

How to make Noodle Soup with Braised Ribs

  • Prepare the pork ribs

    Buy tender pork ribs and cut them into bite-sized pieces, wash with diluted salt water, rinse again with clean water, then place them in a strainer to drain.

    Tips to clean pork ribs, eliminating odor:

    • Additionally, to completely remove the smell of pork, before cooking, briefly dip the meat in boiling water for about 2 minutes, then take it out and rinse it with cold water.
    • Another tip is that you can add a little white wine to the water when blanching the ribs. The wine is very effective in eliminating odors.

  • Prepare other ingredients

    Peel the carrot, cut it into pieces, then halve them.

    Peel the kohlrabi and cut into 3 cm thick slices. Smash the lemongrass, wash the mushrooms, and cut off the stems. Cut the onion into wedges.

    Chop the scallions. Slice the chili. Cut the lime into small pieces.

  • Fry the ribs

    Heat a pan on the stove, add cooking oil. When the oil is hot, place the prepared ribs in and fry over medium heat until the ribs are slightly golden on the edges, then turn off the heat.

  • Stir-fry the vegetables

    Heat a pan on the stove, add cooking oil. When the oil is hot, add the carrots, kohlrabi, and oyster mushrooms in succession and stir-fry with 1 teaspoon of salt for about 5 minutes until just cooked, then turn off the heat.

  • Cook the broth

    Add the fried ribs to the pressure cooker.

    Season the pot with 2 tablespoons of seasoning powder, 1 tablespoon of salt, 1 tablespoon of sugar, 1/3 tablespoon of ground pepper, 1 tablespoon of annatto oil, 1/3 tablespoon of five-spice powder, 1 tablespoon of soy sauce, 1/2 tablespoon of chili powder, 1/2 tablespoon of chili sauce, 1 split shallot, 2 cloves of garlic, and mix well. Then add 250ml of fresh coconut water or filtered water.

    Close the lid and cook on the meat/stew mode for 20 minutes until the water boils, then open the lid and add the crushed lemongrass and star anise. Continue cooking on the meat/stew mode for another 10 minutes before turning off.

    Add more boiling water until the pot is about 2/3 full, then add the sautéed vegetables and continue cooking on the meat/stew mode for another 15 minutes to finish.

    Open the lid, add 1/2 tablespoon of black soy sauce, 1/2 tablespoon of chili sauce, and 1/3 tablespoon of fish sauce, then stir well. Finally, remove the unused lemongrass and star anise from the pot.

  • Blanching noodles and rice noodles

    Place a pot of water on the stove, add the rice noodles along with 1/2 teaspoon of salt and 1/2 teaspoon of cooking oil to make the noodles tasty and not soggy, and boil for about 5 – 6 minutes.

    Tips for delicious, non-soggy noodle and rice noodle blanching

    • When buying rice noodles and noodles, separate them to loosen the strands. If the rice noodles or noodles are too long, you can use scissors to cut them into bite-sized pieces, about 20 – 30 cm.
    • After that, soak the rice noodles and noodles in a bowl of cold water for 5 to 10 minutes.
    • Use your hands to squeeze the noodle strands; as soon as they become soft, remove them immediately. Do not leave them too long as they will become soggy.
    • After removing them, place them in a bowl of cold water, wait about 2 minutes for them to cool down a bit, then take the rice noodles and noodles out and put them in a bowl. Doing this will make the noodles chewy and delicious without being soggy.
    • Do not blanch the noodles in the broth pot as it will cause the broth to become sour. You should boil a separate small pot of water to blanch the noodles.
    • Add a little cooking oil or fat into the blanching water to prevent the rice noodles and noodles from sticking together and to give them a shine.

    Put the blanched rice noodles and noodles, along with the accompanying vegetables in a bowl, then pour the broth on top, and decorate it nicely to complete.

    The delicious ribs noodle soup, with a rich broth, fragrant with lemongrass and star anise, tender sweet ribs full of nutrition, and a bit of pho dipping sauce and chili sauce is absolutely amazing!
