How to choose good beef tenderloin
- You should choose tenderloin that has a bright red color, fine and small fibers, beautiful marbling, and fat that is light yellow. When smelling, it should have the characteristic aroma of beef.
- Additionally, good beef tenderloin will feel sticky to the touch and have a certain elasticity when pressed lightly.
- Avoid buying meat that is dark red, has dark yellow fat, and thick fibers, as this indicates old cattle, which are usually tough and not enjoyable to eat. If the meat is dark red, has white fat, and a slightly fishy smell, it is likely beef that has been faked from buffalo meat.

You can buy good fermented tofu at reputable vegetarian food stores. Additionally, you can make fermented tofu at home to ensure safety and hygiene.

How to cook Stir-fried Beef with Satay

Prepare the beef
Use a knife to trim off any remaining fat from the beef, then cut the meat into bite-sized cubes about 1.5 finger lengths and place them in a large bowl.

Crush and marinate the beef
You take lemongrass, cut off the top, put it into the blender, blend it finely, and then put it into a bowl to marinate the beef. For red onion, garlic, ginger, and chili, blend them finely as well and reserve 3/4 to put into the marinating bowl. The remaining part you scoop into a small bowl.
Next, add 2 tablespoons of spicy shrimp satay, 1 tablespoon of soy sauce, 1 tablespoon of fish sauce, 2 tablespoons of Thiệu Hưng rice wine, 2 tablespoons of annatto oil, 1 tablespoon of brown sugar, and 1 tablespoon of ground pepper into the marinating bowl.
Finally, we mix everything well and wait for 30 minutes for the beef to absorb the spices.

Cut onion and skewer
You peel the onion, cut the onion into bite-sized cubes equal to the size of the marinated beef, about 1.2 finger lengths.
Then put on gloves and take a skewer, alternating meat and onion in a ratio of 1 meat, 1 onion. Do the same with the other skewers until the meat runs out.
Tip:
- To avoid cutting onions that make your eyes sting, you should cut onions in a well-ventilated place, like near a window.

Grill beef skewers
We use tongs to pick each skewer into the air fryer and then select the grilling mode for 12 minutes at a temperature of 180°C.

Make dipping sauce
First, gradually add 3 tablespoons of fermented tofu, 3 tablespoons of condensed milk, 1 tablespoon of annatto oil, 2 tablespoons of toasted white sesame seeds, 1 tablespoon of annatto oil, 3 tablespoons of filtered water, and 3 tablespoons of a mixture of chopped onion, garlic, ginger, and chili into the blender.
Then cover and blend until the ingredients are well combined.
Finally, scoop the dipping sauce into a bowl and enjoy it with the delicious grilled beef cubes with satay.
