How to choose good beef:
- Choose small, tender pieces of beef with a bright red color, the meat should not be smooth (unless it is veal), with small white veins and bright yellow fat. Do not buy large and tough pieces. Pressing the beef with your hand should not leave any residue and should not have a foul smell to ensure it is good beef.
- Female beef is usually tastier than male beef. The best is still veal because it is tender, with white fat and fine texture.
- If the beef is pale green or has round white spots between the muscle fibers, it is infected with parasites or worms. Beef showing signs such as dark color, dark yellow fat is old, will be tough, with yellow bones, poor elasticity, mushy texture, and slimy surface indicates sick beef, which is not good. These are types of meat that should not be purchased for safety reasons.

Prepare the ingredients
Wash the okra and eggplant, slice the okra in half, and cut the eggplant into bite-sized pieces.
Marinate the okra and eggplant with: 1 – 2 tablespoons of satay (depending on your spicy preference), 2 teaspoons of sugar, and mix well to allow the ingredients to absorb the seasoning. Let it marinate for about 15 minutes.
Clean the lemongrass, crush it, and cut into pieces about 3 – 4cm long.
Peel the green bananas and slice them thinly.
Wash the cucumber, peel it, and cut into bite-sized pieces as desired.
Wash the star fruit and cut into thin slices.
Pick and wash the lettuce and perilla, then drain.

Marinate the beef
The brisket should be washed clean and cut into thin slices for easy eating.
Marinate the brisket with 1 tablespoon of white sugar, 1/2 teaspoon of salt, 1 teaspoon of seasoning powder, 1 tablespoon of fish sauce, 1 teaspoon of minced garlic, mix well, and let the meat marinate for about 15 minutes to absorb the spices.

Put 2 tablespoons of fermented fish sauce in a bowl with 1 teaspoon of minced garlic, 1 teaspoon of minced chili, and 1 tablespoon of white sugar.
