    First, wash the purchased beef briefly with water. Next, use a clean, damp cloth to wipe the surface to remove any remaining dirt. Then, use a knife to slice it against the grain into thin, bite-sized pieces.

    • You can use white wine, ginger, salt, lemon, or vinegar, then rub it on the meat and let it sit for about 5 – 10 minutes before rinsing it with water.
    • Additionally, while marinating the meat, you can roast a shallot, peel it, mash it, and marinate it with the beef. This will help effectively eliminate any unpleasant odor.

    Pineapple, once bought, you peel it, while removing all the eyes from the pineapple, then rinse it briefly with water to clean, drain, and then use a knife to cut it into 2 parts, one part sliced thinly, the other part chopped finely.

    Lemongrass, you trim the roots, wash it clean, then crush it and cut it into pieces. Garlic and shallots you peel, and the chili you remove the stem, then chop the garlic, shallots, and chili finely.

    The onion, you peel, half cut into thin slices, the other half cut into wedges. The thinly sliced onion you put into the plate with beef, mix well.

  • Cook the vinegar broth for dipping beef

    Once the ingredients are prepared, you place a pot on the stove with 2 tablespoons of cooking oil over medium heat. When the oil is slightly hot, add the crushed lemongrass to sauté until fragrant.

    Next, add the chopped garlic, shallots, and chili, continue to stir-fry with chopsticks for another 2 minutes.

    Then, add 1.5 liters of coconut water, 100ml of vinegar, 30g of rock sugar, and the onion cut into wedges, use a ladle to stir well and cook for about 5 minutes.

    You take bowl and add the finely chopped pineapple, 4 tablespoons of fish sauce, 2 tablespoons of sugar, and use a spoon to mix well until everything is blended together.
