Prepare the clams
Soak the clams you bought in diluted salt water with sliced chili for about 1 hour so they can release dirt, sand, and impurities.
Then use a brush to scrub the dirt off the outside of the clam shells, rinse several times with water until clean, and let drain.
How to clean sand from clams:
- Soak the clams in water mixed with chili for 4 hours to clean them.
- You can also soak the clams in rice washing water for about 30 minutes to 1 hour to remove dirt and sand.

Prepare other ingredients
Use a knife to peel the skin off the straw mushrooms. Place the straw mushrooms in a bowl of diluted salt water, massage them to remove impurities, and soak for about 5 minutes, then rinse with water.
Next, cut the straw mushrooms diagonally into pieces about the size of a finger.
Smash the lemongrass and cut it into pieces. Squeeze the calamondin to extract the juice, discarding the seeds.
For enoki mushrooms, cut off the ends, separate them, then soak in diluted salt water for about 5 minutes, take them out, rinse with cold water, and let drain.
How to prepare straw mushrooms (bạc hà ) without itchiness:
- First, wash the straw mushrooms to remove dirt, then peel off the outer fibrous part. After that, cut off the belly part of the straw mushrooms and discard it.
- You should cut the straw mushrooms into bite-sized pieces in a pointed shape. Next, mix 1 tablespoon of coarse salt with the pieces of straw mushrooms you just cut and let it sit for about 15 minutes.
- Add cold water to the bowl of straw mushrooms soaking in salt, rinse well, wear gloves, and gently squeeze to drain. Finally, blanch in boiling water briefly before cooking.

Cook the soup
Place a pot on the stove, pour about 1.5 – 2 liters of water into the pot. Heat on high flame
When you see the water in the pot starting to boil, reduce the heat to medium. Then, add smashed lemongrass and blood clams into the pot. Season with a little bit of spices according to your taste, stir well.
Next, when the water in the pot boils again and the blood clams open fully, add enoki mushrooms into the pot. Cut 1 – 2 chili peppers to make the soup more delicious.
Finally, add calamansi juice, stir well. Then chop basil and coriander and add them to the pot, turn off the heat.
