How to choose delicious fish

  • Prioritize choosing fish that are still swimming, bright in color, with no scratches on the body and skin.
  • If you can’t find live fish, you should prioritize fish with bulging eyes, elastic and transparent corneas.
  • Choose fish with tightly attached gills and no foul smell.
  • Additionally, fresh fish will have shiny scales, tightly adhered to the body, and a closed mouth.

How to choose fresh tomatoes

  • You should choose tomatoes that are still fresh, juicy, with smooth, shiny skin and a bright red color.
  • You should only choose those that are intact, with no scratches, bruises, or strange spots.
  • Choose those with a light characteristic aroma, without any strange smells.
  • It’s best to choose those still with stems; gently pull with your hand, if the stem is still firmly attached to the fruit, you can choose to buy it.

How to make Salted Mustard Fish Soup

  • Prepare and marinate the fish

Buy the fish, scrape off the scales, wash it thoroughly with water, and let it drain.

Crush the shallot and coriander, then stuff them inside the fish’s belly. This method will help prevent the fish’s belly from bursting and make the fish meat more fragrant.

Next, marinate the fish for 10 minutes with 1 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, and a little fried garlic oil.

How to prepare fish to reduce fishy smell

    • Rub the fish with a little salt, vinegar, or lemon juice.
    • Then, pour warm water over the fish and let it sit for a few minutes. Note that you should not use hot water as it will cause the fish skin to peel. The slimy part of the fish will coagulate, and you just need to rinse it again with water.
    • If you want to ensure the fish is completely free of fishy smell, you can rinse it again with rice washing water and then rinse with clean water.

Cut the tomatoes into wedges. Diagonally cut the chili peppers.
