- You should buy whole pieces of pork and grind them at home with a meat grinder for better taste and hygiene.
- Good quality pork will have bright pink lean meat and translucent white fat. Fresh meat will have a characteristic pork smell, with no unpleasant or fishy odor.
- Fresh pork will spring back when pressed with your hand and will not be slimy.
- Avoid choosing meat that is dark in color, has an unpleasant smell, feels slightly slimy to the touch, or is too hard or too soft, as this indicates spoiled pork, which can easily cause food poisoning if cooked.

How to prepare Purple Sweet Potato Pork Spring Rolls

Prepare the ingredients
Soak the glass noodles in water for 10 – 15 minutes until they are soft. Then drain and cut the noodles into pieces about 2 finger lengths long.
Dried mushrooms are placed in a bowl and soaked in water for about 10 – 15 minutes until soft, then rinse with water twice. Squeeze out excess water, then chop finely.
Using a knife, cut off the stem of the carrot, peel it, wash it, and shred it thinly. Purple sweet potato, peel it, wash it with water twice, and then shred it thinly as well.
For the green onions, cut off the roots and the yellowed, wilting leaves, then wash and chop finely.

Season the filling
Add the minced pork, carrot, purple sweet potato, glass noodles, mushrooms, and green onions that have been prepared into a pot (or bowl). Season with 2 teaspoons of seasoning powder, 1 teaspoon of oyster sauce, 2 teaspoons of fish sauce, and 1 teaspoon of pepper. Mix all the ingredients together well.
Tip: Do not season the filling too strongly as the dish will be served with chili sauce. If it is too salty, it will be overwhelming when eaten with the sauce. -
Roll and Fry the Spring Rolls
Soak the rice paper briefly in water, then place a piece of rice paper on a plate. Add about 2 tablespoons of filling on top, fold the right and left sides, then roll it towards the front. Roll tightly so that the spring rolls do not become loose during frying. Continue rolling until all the filling is used up.
Once all the filling is rolled up, heat a pan on the stove and add about 100ml of cooking oil to the pan. When the oil is hot, add the spring rolls, frying them on medium heat until the outside is golden and crispy, and the inside is cooked evenly. Then remove and let drain the oil.
Tip: Do not soak the rice paper too wet because if it is too wet, it will splatter oil during frying and take longer to become crispy. -
