- When selecting, you should choose those that are round or elongated in shape, without bulges or indentations. Those with bulges and indentations are often fibrous, bland, and not tasty.
- Additionally, when buying sweet potatoes, you should gently squeeze them. If they are not too hard, these are the ones that are less fibrous, starchy, and very sweet.
- You should avoid purchasing sweet potatoes that are too small or too large as they often contain more fibers and are not tasty.
How to choose delicious wood ear mushrooms
- Prioritize choosing dried wood ear mushrooms with large, thick ears, a stem with few small mushrooms, dark amber color, slightly shiny (for the top side of the mushroom) and a coffee milk color (for the underside of the mushroom).
- Avoid choosing black wood ear mushrooms that look too dark, as this type may become mushy when soaked in water and is less crunchy.
Where to buy fresh rice paper for spring rolls?

Prepare and Dry the Sweet Potatoes
The sweet potatoes you buy should be washed clean, peeled, and then sliced into thin threads using a multi-purpose knife. After that, place them on a tray with 1/2 tablespoon of seasoning powder, 1/2 tablespoon of pepper, and 1 tablespoon of vegetarian seasoning.
Mix well and spread the sweet potatoes evenly on the tray, then leave them to dry in the sun for about 1 hour until the sweet potato threads wilt and become crispy.
Tip: If you cannot dry them in the sun, you can use a dehydrator at a temperature of 60 degrees Celsius for 30 minutes. -
Prepare Wood Ear Mushrooms and Mix with Sweet Potatoes
Cut off the stems of the wood ear mushrooms you bought, then soak them in water for about 3 hours and cut them into thin threads about 1/2 finger width.
Next, add the sliced wood ear mushrooms to the tray of wilted sweet potatoes and toss them together so that the sweet potatoes and mushrooms mix well.

To wrap the spring rolls, first place a piece of fresh rice paper on a plate, then add the sweet potato and wood ear mushroom mixture on top.
Fold the two edges of the rice paper in, use your hand to dab a little water on the tail of the rice paper and roll it up tightly. Repeat until all the sweet potato filling is used.
Tip:- When wrapping the spring rolls, you should roll them tightly so that they look good and don’t absorb too much oil when frying.
- To keep the spring rolls crispy for a long time when frying, you should place them in a box and store them in the refrigerator for about 2 hours before frying.

Place a pan on the stove, add 600ml of cooking oil to the pan, wait until the oil is hot, then gradually add each spring roll.
