How to make Spicy Crispy Fried Chicken

Prepare the chicken
To prepare the chicken cleanly and without odor, use 1 spoon of vinegar mixed with salt and rub it evenly on the chicken, or you can soak it in salt and diluted vinegar for about 3 – 5 minutes. After that, rinse thoroughly with clean water several times and let it drain or use a paper towel to absorb the water.
After the chicken has drained, use a knife to separate the chicken meat from the bones.
Tip:- In addition to using vinegar, you can also substitute it with lemon juice mixed with a little salt and proceed as above.
- Another method is to use crushed ginger and roasted shallots to rub on the chicken meat and let it sit for about 10 – 15 minutes, then rinse with water.
-
Marinate the chicken
Put the prepared chicken into a bowl, then add 1 teaspoon of salt, 1/2 teaspoon of garlic powder, 1/3 teaspoon of ginger powder, 1/2 teaspoon of paprika powder, 1/2 teaspoon of regular chili powder, and 1/2 teaspoon of pepper, then mix the mixture well.
Use plastic wrap to tightly cover the bowl, then place it in the refrigerator in the cool compartment to let the chicken absorb the spices.
Tip: Depending on each person’s preference for spiciness, you can adjust the amount of chili powder to be less or more. -
Make the batter and coating
For the batter, add 50gr flour, 1 chicken egg, 120ml unsweetened fresh milk, 1/3 teaspoon of salt, and 1/3 teaspoon of regular chili powder into a bowl, then mix well.
After the chicken has absorbed the seasoning, marinate it with the batter, then cover the bowl tightly with plastic wrap and place it in the refrigerator for 30 minutes.
For the coating, add 120gr of flour, 80gr corn starch, 1/2 teaspoon of paprika powder, 1/2 teaspoon of baking powder, 1/3 teaspoon of salt, and 200ml of cold water into a bowl, then stir well to dissolve.
Take the chicken out of the refrigerator and roll it in the coating. Soak the chicken in a bowl of cold water for 10 minutes.
Remove the chicken from the cold water and roll it in the coating once more (roll evenly so that the coating is uniform on the chicken) before frying.
Tip: Soaking the marinated chicken in cold water will help make it crispier when fried. -
Fried Chicken
Put a frying pan on the stove, add 250ml of cooking oil to the pan and wait for the oil to heat up (make sure the oil covers the surface of the meat).

- When buying chicken, choose meat that has a natural pinkish-red color inside, not too pale or too dark.
- If buying processed and packaged chicken, you should carefully observe the expiration date and packaging date, as well as check if the bag is intact.
- You should not buy chicken with bruises, blood spots, pale coloration, or a foul smell. This may be chicken that is sick or has been stored too long.
