How to choose fresh, delicious water mimosa
- You should choose tender, juicy, fresh water mimosa that is not wilted. Choose water mimosa that is still fresh, with firm and bright green leaves. Dark green leaves mean the water mimosa is old and not tasty.
- Tender water mimosa with few flowers will be crisp and tastier than old water mimosa with many flowers.
- You should choose young water mimosa for the salad, as it will be tastier. Young water mimosa will retain its crispness and have a better aroma.
How to prepare Vegetarian Water Spinach Salad

Prepare the ingredients
Clean the water spinach, rinse with diluted lemon juice or vegetable wash. Break the long stems in half for easier eating.
Soak the pork ribs in cold water for about 30 – 40 minutes to soften. Squeeze out excess water until dry, then rinse with water about 5 – 6 times and squeeze the ribs to remove more foam. After that, tear the ribs into small pieces, place them in a bowl, and season with: 1/2 teaspoon of MSG, 2 teaspoons of salt, and mix well to absorb the flavors.
Tip: Do not rinse with salt water as it will bruise the vegetables, making them less tasty. When washing, be gentle to avoid damaging the greens. -
Mix the dressing
In a bowl, add 1.5 teaspoons of sugar, 3 tablespoons of vinegar, and 1 teaspoon of salt, and stir well to dissolve.
Then add 1 teaspoon of chili sauce and mix well. Taste and adjust seasoning, then add chopped chili if desired.
Note: It is recommended to mix the dressing separately and stir until all ingredients are dissolved before adding it to the salad, so that the salad will absorb the dressing evenly and taste better. -
Fry the vegetarian ribs
Heat a pan on the stove, add about 200ml of cooking oil, and heat over medium heat until the oil shimmers, then add the vegetarian ribs to fry until golden and crispy.
After that, remove them to drain the oil. Let them cool a bit before adding them to the salad.

Mix the salad
Place the cleaned vegetables on a plate, add the prepared dressing, gently toss to mix the salad evenly, and then transfer it to a serving plate. Finally, place the fried ribs on top of the salad to complete the dish.
