Place a pot on the stove, add a little water, 3 stalks of lemongrass cut into pieces, a little julienned ginger, and the cleaned scallops. Cover tightly and boil the scallops until they open.
Let the scallops cool, then remove part of the shell.

Roast peanuts
Place a pan on the stove, add 50g of peanuts, 1 tablespoon of salt, and roast the peanuts until they are fragrant and cooked.
Then, use your hands to crush the peanuts to remove the shells.

Make onion oil
Place a pan on the stove, add about 100ml of cooking oil, and heat it.

Prepare the scallops
Prepare a bowl of water, add some salt and some fresh chili, then soak the scallops for 30 minutes.
After 30 minutes, rinse the scallops thoroughly with water several times.
Use a knife to separate the scallop from the shell, then use your hands to take out the scallop’s coral.
Note: Only take the coral of the scallop and the white meat underneath the scallop. -
Sautéing scallop meat
Place a pan on the stove, add the prepared scallops, 1 teaspoon of seasoning, and sauté over medium heat for about 5 minutes until the meat is firm.
