    To eliminate the fishy smell of carp, you can rub the fish with 1 tablespoon of salt and 1 lemon to clean all sides, then rinse thoroughly with water, drain, and cut into pieces.

    • Method 1: You can soak the fish in rice water for about 15 – 20 minutes. Then, take it out and rinse it well with water.
    • Method 2: Mix a few tablespoons of white wine or vinegar into water, then soak the fish for about 5 minutes and rinse it well with water.
    • Method 3: Add a few slices of ginger that has been crushed and soak it with the fish for about 5 minutes, then rinse several times with water.

    Line the air fryer with aluminum foil, place the fish head in the fryer, then set the temperature to 200 degrees Celsius for 10 minutes. After the fish head is cooked, take it out onto a plate, then put the fish body into the fryer, adjusting to the same temperature.

    Place a pot on the stove, then add 1 tablespoon of cooking oil and heat it over medium heat. Wait for the oil to heat up and add the shallots to sauté until fragrant for about 2 minutes.

    Next, add tomatoes and pickled mustard greens to the pot and stir-fry for about 3 minutes, then pour in 1 cup of water and 2 tablespoons of fish sauce.

    Arrange the carp in the pot. To prevent the fish from being fishy, pour hot water into the pot until it just covers the surface of the fish, add the crispy pork fat and tofu, cover the pot, and stew on low heat for about 30 minutes.

    Finally, add a little ground pepper and coriander to the pot, adjust the seasoning to taste, and then turn off the heat.
