  • You should choose thick-bodied fish, looking uniform, with bright scales, and no bruises or signs of being too worn out.
  • Avoid choosing fish with bulging bellies, as they may contain a lot of fat or large intestines (due to farming), or they may contain fish eggs; these fish are usually less meaty.
  • For a tastier dish with firmer fish meat, you should choose river carp, which develops in a more natural environment rather than carp raised in ponds or lakes.
  • Wild fish will have slightly firmer bodies and smaller bellies. Additionally, river carp will have slightly yellow skin, and the belly will have a slightly pink layer. In contrast, farmed carp will be whiter and shorter in size.

How to choose good quality ginger

  • Choose old ginger roots with a slightly wrinkled and rough surface. Prioritize those with an outer skin that still has dirt and a shiny, intact surface, without any black spots or damage.
  • Good ginger usually has a quite strong characteristic aroma, avoid selecting ginger roots that have no fragrance when smelled.
  • To buy the best quality ginger, you should purchase it from reputable stores, large markets, or supermarkets.

  • Prepare the ingredients

    The fish should be cut into bite-sized pieces, then gently rub salt over the fish, rinse thoroughly, and let it drain.

    Peel the ginger, wash it thoroughly, and slice it.

    Wash the chili briefly with water, let it drain, then slice it thinly.

    Wash the lemongrass, then cut it into bite-sized pieces.

    How to clean fish effectively to remove the fishy smell

    • Method 1: After cleaning, cut the fish into bite-sized pieces, then soak it in rice water for about 15 – 20 minutes. After that, take it out and rinse it with water again until clean, then let it drain.
    • Method 2: Squeeze lemon for juice and mix it with warm water, then soak the fish for about 5 – 7 minutes. Next, take the fish out, rinse it clean, and let it drain.
    • Method 3: Alternatively, you can mix a few tablespoons of rice wine and white vinegar into water, then soak the fish for about 5 minutes and rinse it clean with water. This method is also very effective at removing the fishy smell.

  • Marinate the fish

    Put the fish into a bowl along with 1 tablespoon of MSG, 1 tablespoon of seasoning powder, 1.5 tablespoons of salt, 1/2 tablespoon of pepper, 1 tablespoon of oyster sauce, 2 tablespoons of fish sauce, 1/2 tablespoon of sugar, and 1 tablespoon of lemon juice, then mix well and marinate for about 1 hour to let the fish absorb the spices.

    In another pan, place it on the stove, set to medium heat, add 2 tablespoons of sugar and 2 tablespoons of hot water to the pan, and cook until the mixture in the pan turns a caramel color, then add all 500ml of hot water.

    Next, add the fish, ginger, chili, and chopped lemongrass into the pan. Reduce the heat to low and simmer for about 45 minutes until the water is reduced by more than half, then season to taste and turn off the heat.
