  • Buy jellyfish from reliable sources, such as supermarkets, grocery stores, or markets with food safety certification.
  • When selecting fresh jellyfish, choose those that have a light pink color, a slightly translucent surface, and are not sticky.
  • When touched, the jellyfish should feel firm, elastic, and not have any liquid oozing out.

How to choose fresh pork

  • Fresh pork will have a dry membrane on the outside, and the surface of the cut should feel firm to the touch without a sticky sensation.
  • The fresh meat should be a pinkish-red color, soft, while the fat should be opaque white.
  • If you see the meat is dark red or blackened, it is not advisable to buy it as it may be pork raised with lean meat additives.
  • Avoid purchasing meat that is pale green, darkened, or has red skin.
  • Choose meat that is elastic when pressed, and has a characteristic fresh meat smell.

    • During the soaking process, you should change the water about 3 times. When replacing with fresh water, still add a similar amount of lemon juice.
    • When blanching, do not blanch the jellyfish for too long as it will cause the jellyfish flesh to lose water and shrink.

    Heat a pan on the stove and add 1 tablespoon of cooking oil, when the oil is hot, add garlic to sauté it fragrant, then add jellyfish and stir quickly over high heat, continue to add shrimp and meat to stir briefly and then remove.

  • Prepare and stir-fry tomatoes

    Wash the tomatoes and cut them into wedges.

    Add the sautéed tomatoes to the pot of meat broth, cook until the broth boils, then add 1 teaspoon of shrimp paste, 1 teaspoon of seasoning powder, thinly sliced chili, and stir well. Adjust the seasoning to taste and then turn off the heat.
