Noodles 1 kg Pork bones 500 gr Dried shrimp 20 gr Dried squid 20 gr Squid 500 gr Minced meat 200 gr Onion 1 piece White radish 1 piece Shallots 4 pieces Chives 50 gr Bean sprouts 200 gr Celery 50 gr Rock sugar 1 tablespoon Fish sauce 2 tablespoons Cooking oil 1 tablespoon Common spices a little (pepper/salt/sugar/…)

How to prepare Squid Noodle Soup

  • Prepare the ingredients

    Wash the pork bones thoroughly with salt water. Soak the dried shrimp in water until soft, then rinse.

    Lightly grill the dried squid. Grill the onion and shallots until fragrant. Peel the radish and cut it into pieces.

  • Cook the broth

    Pour 1.5 liters of water into a large pot, add 500 grams of pork bones, 20 grams of dried shrimp, 20 grams of dried squid, 1 onion, 4 shallots, and season with 1/2 tablespoon of salt. Simmer the broth over low heat for about 1 hour.

    Regularly skim off the foam and simmer on low heat to keep the squid noodle broth clear.

    After simmering the bones for 1 hour, remove the onion and shallots. Season the broth with 1/2 tablespoon of salt, 1 tablespoon of rock sugar, and 2 tablespoons of fish sauce.

    Once the squid noodle broth boils again, turn off the heat.

  • Processing minced meat and squid

    Heat 1 tablespoon of cooking oil, add minced meat and stir-fry until cooked, season with 1/2 teaspoon of salt and 1/2 teaspoon of pepper.

    Clean the squid and cut it into round rings.

    Prepare another pot of water, bring it to a boil and blanch the squid rings until cooked. Only blanch the squid until just done; if blanched too long, the squid will become tough.

    Note: Fried onions help make the squid noodle soup richer and more delicious. If you make fried onions and garlic at home, use the oil used for frying onions and garlic to stir-fry the meat for a more fragrant result.

    Quickly blanch the noodle strands and place them in individual bowls.

    Add minced meat, squid, broth, a few slices of chili, and sprinkle fried garlic, fried shallots, and serve with water spinach, chives, and bean sprouts.

  • Shrimp shell: Choose shrimp with a transparent outer shell that has a characteristic seafood smell, not rotten, and without dark patches or inconsistent colors. The outer shell of the shrimp should be dry, not slimy.
  • Shrimp shape: Fresh shrimp will have a straight body, while shrimp that have been stored for a long time will curl up. The shrimp body should be firm, not soft or mushy.
  • Shrimp head, tail, and legs: Fresh shrimp will have heads, legs, and tails that are firmly attached to the body, with the tail folded together. If the shrimp tail is spread out, it may have been injected with additives. Do not choose shrimp with heads, legs, and tails that have turned black, as this indicates they have been stored for too long and are not fresh.

  • Choose quail eggs with a nice, sturdy shell, not gray in color, and without any speckles.
  • When shining a light or holding it up to sunlight, hold the egg in your hand, exposing only the two ends, and look at the egg from one side while lighting it from the other side. If it is a fresh egg, it will have a translucent pink color with a pink dot in the middle.

    To remove the odor from the pork bones, chop them into pieces after buying, then add 1 teaspoon of salt and scald them in boiling water for about 5 minutes.

    After scalding, wash the pork bones thoroughly with water and let them drain.

    To prepare the squid, hold the tentacles and pull them away from the body. Next, remove unnecessary parts such as the ink sac, skin, brown digestive sac, and backbone.

    Then, rub the squid with 1 tablespoon of salt and 100ml of white wine to clean it thoroughly and help eliminate the fishy smell. Rinse the squid again with cold water and let it drain.

    Use a knife to cut the squid into pieces about the size of a large finger, marinate the squid with 1 teaspoon of fried garlic and 1 teaspoon of fried onion. Wrap the squid in plastic wrap and place it in the refrigerator.

    Shrimp should be cleaned, boiled, and peeled.

    Peel the radish and cut it into pieces. Clean the cilantro and chop it finely.

    Put a pot on the stove, add the pork bones with 2.5 liters of water, 1 onion, the radish, and 30g of dried squid. Season the broth with 2 teaspoons of seasoning, 1 teaspoon of salt, and 1/2 tablespoon of rock sugar.

    Simmer the broth on low heat for about 1 hour. Regularly skim off the foam and keep the heat low to ensure the squid noodle soup broth is clear.

    Using the shrimp boiling water, place 20 quail eggs in to boil for 5 minutes, then remove and peel them.

    Put a pan on the stove, add 2 tablespoons of cooking oil. Sauté the onion until fragrant, then add the minced meat and stir well. Season with 1 tablespoon of sugar, 1 tablespoon of fish sauce, and stir the meat to absorb the seasoning evenly.

    After simmering the bones for 1 hour, remove the onion. Season the broth with 1 teaspoon of salt, 1/2 teaspoon of rock sugar, and 2 tablespoons of fish sauce to taste.

    When the squid noodle broth boils again, turn off the heat.

    Add green chili salt into a bowl, squeeze in 1/2 lime and stir well.
