How to prepare Tofu Bag with Lotus Seeds in Plum Sauce

Remove the tofu filling
First, use a knife to cut off the top of the tofu (about 2 cm), then continue using the knife and spoon to remove all the filling inside the tofu, leaving only the fried tofu skin outside.
Don’t rush to throw away the tofu filling after removing it; keep it in a bowl for the filling!
The more carefully you remove the tofu filling, the nicer the bag shape will be. If the filling is not removed properly, the bag will not be soft and will be hard to tie. -
Stir-frying the tofu filling
Place a pan on the stove and add 2 tablespoons of cooking oil, wait for the oil to heat up a bit, then add 1 tablespoon of minced shallots and stir-fry until fragrant, then add the prepared ingredients: shiitake mushrooms, wood ear mushrooms, carrots, cassava, and lotus seeds, and stir well.
When the ingredients are mixed well, continue to season: add 2 tablespoons of vegetarian seasoning, 1 teaspoon of pepper, and stir-fry for 8 minutes over low heat.
After the time is up, add in 1 cup of the reserved tofu filling and a small bunch of rice vermicelli that has been cut into small pieces, stir-frying until all the ingredients are well mixed.

Stuffing the tofu
Take the tofu skin that has been emptied, separate the opening of the skin, and then start adding spoonfuls of the stir-fried filling. After filling it, use a blanched chives stalk to tie around the opening to shape it like a pouch!
Note, you should only fill the skin with a little over half of the filling; do not overfill because tying the chives will be very difficult and not look nice. -
Making plum sauce
Prepare a bowl and gradually add the following ingredients: 1 teaspoon of pepper, 2 tablespoons of plum sauce, 2 tablespoons of ketchup, 1 tablespoon of soy sauce, 2 tablespoons of chopped plum, 4 tablespoons of sugar, 1/2 teaspoon of shrimp paste color, 2 tablespoons of vinegar, 1 cup of filtered water, then mix well to finish.

Cooking the plum sauce
Heat a pan on the stove, then add 1 tablespoon of cooking oil. Wait until the oil is hot, then add 1 tablespoon of finely chopped garlic and sauté until fragrant. Next, pour in the mixed sauce and simmer on low heat for 10 minutes.

Cooking tofu wrapped with plum sauce
In the final step, simply add each piece of tofu wrapped into the boiling sauce in the pan, sprinkle the sauce over both sides, and simmer on low heat for another 5 minutes. The dish will be ready to enjoy!

Completion
Thanks to the vegetable filling inside, the tofu wrap retains its moisture and does not become too dry. Moreover, the nutty flavor of the lotus seeds combined with the tofu filling blends beautifully with the sweet and sour plum sauce, making it incredibly appetizing.
