Ingredients for Green Mango Beef Salad For 3 people
Beef brisket 300 gr Carrot 1/2 piece Green mango 1 fruit Herbs 100 gr (basil/cilantro/coriander) Garlic 4 cloves Fried garlic 1 teaspoon Chili 3 fruits Lemon juice 1.5 tablespoons (or vinegar) Peanuts 2 tablespoons (groundnut) White wine 1 tablespoon Cooking oil 2 tablespoons Fish sauce 2 tablespoons Common spices a little (sugar/seasoning/pepper)
How to choose fresh ingredients
How to choose fresh beef
- To prepare a tastier dish, you can use beef brisket; however, the price will be higher than regular brisket.
- You should prioritize selecting pieces of beef that are bright red with white marbling and have yellowish fat, with the beef fibers being tender, small, and not too fine.
- If you gently press on a good piece of beef with your hand, it should have a good firmness and elasticity, not feel sticky, and should not have any unpleasant or abnormal odors.
- You should avoid purchasing pieces of beef that are pale green or dark red, with dark yellow fat, white spots on the meat, and that feel mushy and slimy to the touch.
How to choose delicious green mangoes
- You should buy mangoes that are very green and sour; the finished dish will be crispier and more appealing. Avoid choosing mangoes that show signs of ripening or are ripe, as they will get bruised and taste unpleasant when mixed into the salad.
- For green mangoes, choose those that are firm, have a white powdery exterior, dark green skin, fresh green stems, and may have some sap.
- Avoid selecting green mangoes that are soft, as these are usually unripe fruits that have been stored for a long time. These will have a bland taste, lack fragrance, and the flesh will be mushy.
- If you do not like sour tastes, you can choose four-season mangoes or sticky mangoes.
How to choose fresh and delicious carrots
- You should choose carrots that are straight in shape, with smooth skin, bright orange color, feel firm, hard, and heavy in hand, as these are the ones that are tasty and rich in vitamins.
- You should buy those with a small core, as the smaller the core, the sweeter the carrot.
- You should not choose carrots that have leaves or branches at the base, with a thick, wide shoulder, as these are usually carrots with large cores, which are not sweet and contain fewer nutrients.
- Avoid buying carrots that are misshapen, dark in color, bruised, or have wilted leaves and branches.

How to make Green Mango Beef Salad
-
Prepare and marinate the beef
To clean and eliminate the smell from the beef, soak it in 1 tablespoon of white wine for about 10 minutes, then wash it with water several times and let it drain.
How to clean beef without any smell
- You can rub salt all over the piece of meat and then rinse it with water.
- Soak the meat in a little diluted white wine for about 5 minutes and then rinse it with water.
- Alternatively, you can also use lemon to rub on the piece of meat and then rinse it with water.

Proceed to slice the beef into thin, bite-sized pieces and place them in a bowl.
Marinate the beef with 1 teaspoon of seasoning, 1/2 teaspoon of pepper, and 1 teaspoon of fried garlic, then mix well. Let it marinate for about 15 – 20 minutes for the beef to absorb the spices.
-
Prepare the other ingredients
Peel and wash the carrot and green mango. Use a grater to shred the carrot, and for the green mango, use a slicer to cut it into small pieces about 1/2 finger thickness.
Tip: Soaking the carrot in sugar will help the carrot become crispy and sweet, making it taste better.
Peel and finely chop the garlic. Finely chop the chili. Wash the herbs and chop them finely.
Put 2 tablespoons of peanuts in a pan and roast over low heat for about 10 minutes until the peanuts are golden, fragrant, and easily separated from their skins.
-
Stir-fry the beef
Add 2 tablespoons of cooking oil into the pan, then pour in the marinated beef and stir-fry over medium heat for about 10 minutes until cooked.
Tip: Stir-fry just until the beef is cooked to avoid making it tough, which would make the dish less enjoyable. -
Make the dressing
In a bowl, add 2 tablespoons of fish sauce, 1 tablespoon of sugar, and 1.5 tablespoons of lime juice (or vinegar) and mix well until the mixture is dissolved.
Then add minced garlic and chili to the fish sauce dressing and mix well.
-
Mix the salad
In a deep plate, add the stir-fried beef, shredded carrot, and mango, then gradually pour in a little of the prepared dressing and use your hands to mix the ingredients well.
Continue to add the herbs and a little more dressing and mix thoroughly. When serving, add roasted peanuts that have been shelled to complete the dish.
Tip: Gradually add the dressing to taste, avoiding pouring all the dressing at once as it may make the salad too salty.
