  • Prepare the salmon

    Fillet the salmon you bought, use a pestle to crush it or blend it finely, then mix it well with 1 tablespoon of white wine. After that, massage the salmon for about 5 – 10 minutes, then rinse it clean with water. Next, pat the salmon dry.

    Preheat the oven to 220 degrees Celsius for 15 minutes.

    Wrap the baking tray in aluminum foil and place the salmon on top with the skin side down. Marinate the salmon with 1/2 tablespoon of olive oil, 1/2 teaspoon of garlic salt, 1/4 teaspoon of ground pepper, and let it soak for about 10 minutes.

    Put the salmon in the oven and grill at 220 degrees Celsius for 10 – 15 minutes.

    Crack 2 eggs into a bowl and beat well until the eggs are mixed.

    Add the shredded salmon, bell pepper, and sautéed onion into a bowl. Then add 1 teaspoon of garlic salt, 1/4 teaspoon of ground pepper, 125g of breadcrumbs, 2 beaten eggs, 35g of mayonnaise, 1 teaspoon of Worcestershire sauce, and 35g of parsley to the bowl, then mix well to combine the ingredients.

    Tip:

    • Adding eggs to the filling helps keep it moist and bind the ingredients together.
    • If the filling is too wet, you can add more breadcrumbs.
    • Conversely, if the filling is too dry, you can add more mayonnaise to the mixture.

  • Shape and fry the cake

    Use an ice cream scoop to scoop the cake filling into round balls, then press them flat with your hands.

    Tip: If you don’t have an ice cream scoop, you can place a portion of the cake filling in the palm of your hand, roll it into a ball and then flatten it.

    Place a pan on the stove, add 2 tablespoons of olive oil and 2 tablespoons of unsalted butter, and melt them. Arrange each piece of salmon cake in the pan and fry over medium heat for about 4 minutes, then flip them over and continue frying for another 3 – 4 minutes until the cake is evenly golden on both sides.

    Add 245g of mayonnaise, 245g of pickled cucumber, 10g of chopped parsley, 1 teaspoon of lemon juice, 1 teaspoon of sugar, 1/4 teaspoon of ground pepper, and 1 tablespoon of diced onion, then mix well for the ingredients to blend together.

    Place the Tortilla into a zip bag, then use a rolling pin to crush it, after that add 62g of breadcrumbs and mix well.

How to Choose Fresh Salmon

For whole live salmon

  • The body of the fish should have brightness and shine. The skin should be tightly adhered to the body, with no peeling, bumps, or scratches.
  • For the gills, you can easily observe them with the naked eye. If the gills are bright red and not torn, the fish is still fresh. You should not buy fish that have gills that have turned dark red or pale. Additionally, the gills should not have any signs of blood clots.
  • Fresh fish has a characteristic fishy smell and no foul or chemical odors. Moreover, the fish should have bright colors, not dull or faded, and the flesh should have good elasticity, indicating that it is fresh.

For filleted fish

  • Fresh salmon meat should be bright pink or orange. If the flesh turns darker, it means the fish has begun to spoil or is about to decompose.
  • Additionally, good meat will have extremely good elasticity. When you press your finger into the meat, if it leaves a dent but quickly returns to its original state, the fish is still fresh.
  • Observe the surface of the fillet; it should be dry and not wet or leaking any strange fluids. The fat lines on the fish should be uniformly colored and bright, not dull or with brown spots.
  • Furthermore, fresh fillets will have a characteristic pleasant smell, with no strange or pungent odors.

How to Remove the Fishy Smell from Salmon

Salmon has a characteristic flavor, but to enjoy the authentic taste, you need to know how to eliminate the fishy smell. You can refer to one of the following methods:

Method 1: Remove the fishy smell from salmon using lemon

  • Add 2-3 tablespoons of lemon juice and 1 teaspoon of salt to a bowl of water.
  • Add the salmon and gently stir, letting it sit for about 30 seconds to 1 minute, then rinse with clean water. You can also use lemon slices to rub and gently massage the fish meat for a cleaner result.

Method 2: Remove the fishy smell from salmon using fresh milk

  • You put the fish meat into a bowl and pour the fresh milk into the bowl so that it completely covers the fish meat.
  • Proceed to soak the fish in the milk for about 10 minutes, then rinse it clean and let it drain.

Method 3: Eliminate the fishy smell of salmon with alcohol and ginger

  • Take a little ginger, then chop it finely or crush it. Then put it in a bowl and pour in some white alcohol; if you don’t have alcohol, you can also substitute it with vinegar, then add the piece of salmon and gently stir.
  • Soak the fish in the mixture for about 7 – 10 minutes, then take it out and rinse it with cold water.
