- Color: fresh pork will have a dry membrane, bright red color, and a slightly firm surface. When cutting the meat, the cross-section will show a bright pink color, with pale pink skin that is soft. Prepare the Ingredients
Peel the taro you bought.
After peeling the taro, shred it and let it sun-dry for about 2 hours to make it crispier when frying.
Chop the green onions finely and slice the purple onions thinly.
Tip to Peel Taro Without Itching:
- Method 1: wear a pair of plastic gloves to avoid direct contact with the taro so that you can dispose of the gloves after use, or use rubber gloves.
- Method 2: briefly boil the taro to help dissolve the taro sap. First, put the taro in a pot with 1 liter of water and 2 teaspoons of salt, bring it to a boil, when the water boils, turn off the heat, then pour the taro into a colander, rinse the taro with cold water to cool it down quickly, and then peel the taro.

Fry the taro
Add a moderate amount of cooking oil into the pan, add shallots and sauté on low heat until the shallots turn golden and fragrant, then turn off the heat and remove the shallots.
Add a new amount of oil, add the dried taro and fry until the taro is slightly golden, then turn off the heat, remove the taro, and let it drain.

Wrap the spring rolls
Add ground meat to a bowl, then add sautéed shallots, scallions, 1/2 teaspoon of pepper, seasoning powder, monosodium glutamate, fish sauce, and taro, mix well and marinate for 15 minutes.
