Avoid selecting carrots with wilted or bruised tops, damaged bodies, leaking water, or dark spots. If you press them with your hand and they feel soft, do not buy them.
How to prepare Pickled Cabbage

Prepare the vegetables
Peel the carrots and ginger, wash them clean, and cut them into strips.
Wash the cabbage and cut it lengthwise into bite-sized pieces, place it in a bowl, and massage the cabbage with 1 tablespoon of salt. Wait about 15 minutes, then rinse thoroughly with water 2 to 3 times.
Wash the chili peppers, peel the garlic, and finely chop both the garlic and chili.
Remove any wilted or yellowed parts of the Vietnamese coriander, wash it clean, and let it drain.

Mixing the cabbage mixture
Mix the cabbage and carrot evenly with 2 tablespoons of salt, 3 tablespoons of sugar, and 3 tablespoons of vinegar.
Then add ginger, garlic, and chili and mix well again.
Once all the ingredients are well combined, add the Vietnamese coriander and mix again to complete.
