How to choose good tamarind

  • You should choose ripe tamarind with a smooth, unblemished skin. The tamarind should not have a sour smell but should have a characteristic sweet aroma.
  • You should not choose tamarind that has been stored for a long time as it will dry out and lose flavor.
  • If you buy shelled tamarind, make sure to purchase it from a reputable source with clear origins.

  • Mix salt and chili sugar mixture

    Put 200g of sugar into a bowl, add 2.5 teaspoons of salt, 3 teaspoons of plum powder, and 2 teaspoons of chili powder, then mix the mixture well.

    Tip:

    • To prevent the tamarind candy from becoming watery, you should lightly roast the salt before adding it to the mixture.
    • If you cannot find plum powder, you can substitute it with 1.5 teaspoons of roasted salt.

  • Cook tamarind candy

    Place a pan on the stove over low heat, then add 80ml of water, 500g of sugar, 1/3 teaspoon of salt, and finally the tamarind.

    Proceed to mash the tamarind and stir evenly; cook for about 1 hour on low heat, then turn off the stove.

    Finally, sprinkle some glutinous rice flour through a sieve over the cooked tamarind and mix well.

    Tip:

    • During the cooking process, if any tamarind seeds fall out, you should remove them!
    • To check if the tamarind candy has been cooked long enough, take a little tamarind out to cool, then gently squeeze it to see if the sugar has completely dissolved.

    Let the cooked tamarind cool slightly, wash your hands thoroughly, then roll small balls about the size of your thumb and place them in a bowl of pre-prepared chili salt mixture. You coat a layer of chili salt over the tamarind. Do similarly until all the tamarind is finished!

  • Prepare the ingredients

    Put 500gr of tamarind into a bowl, add 1 cup of warm water. Use your hands to mash the tamarind and remove the leftover tamarind skin.

    Note: When mashing, use gloves to ensure hygiene

    Add 500g of granulated sugar into the pan, add 1 bowl of water along with the mashed tamarind and simmer on low heat for about 60 minutes.

    When the tamarind has thickened, add 3 tablespoons of glutinous rice flour and stir until the mixture forms a mass, then let it cool.
