How to choose good passion fruit
- Good passion fruit is large, about the size of an adult’s fist, with a red-purple or brown-purple skin and a distinctive aroma.
- You should choose passion fruits that feel firm to the touch, and when shaken, they make no sound, as these fruits have more flesh and are ripe.
- To make delicious passion fruit jam, prioritize buying fruits that are ripe, with taut skin, rather than wrinkled ones, as they are easier to process.
- Do not buy fruits that feel light, are too small, or have smooth, shiny, green skin as they are not ripe and will not make good jam.
- Avoid choosing passion fruits that are bruised, leaking, or have a rotten smell.

How to make Passion Fruit Jam

Prepare the passion fruit
First, with 600g of passion fruit, use a knife to peel off the tough reddish-purple outer skin of the fruit.
After peeling, use a knife to make lengthwise cuts on the fruit and divide it evenly into 5 parts. Do not cut through both ends of the passion fruit but leave a segment about half a finger’s length.
After cutting, press the two flat ends down to form a flower shape and use a spoon to separate the seeds inside from the pulp.
For the passion fruit seeds, strain through a sieve to extract the juice.
With 600g of cleaned passion fruit, you will get 350g of passion fruit pulp, rinse it thoroughly with water and use your hands to remove all the sticky membranes inside the passion fruit. Then, drain the excess water.

Marinate the jam
After the passion fruit peel is dry, you marinate it with 200gr of sugar and all the passion fruit juice, then use a spoon to stir well.
You should marinate the jam for 3 hours until the sugar is completely dissolved.

Cook the jam
You put all the marinated passion fruit into the pan and cook over medium heat.
When the syrup starts to boil, you lower the heat and cook until the syrup thickens.
To ensure the passion fruit absorbs the sugar evenly and has a nice color, occasionally use chopsticks to flip the pieces and press the passion fruit down, as well as use a spoon to drizzle the syrup from the pan over the passion fruit pieces.
When the syrup has thickened and the jam turns a beautiful red color, you turn off the heat.

Drying the Jam
After making the jam, you can either sun-dry it or use an oven to dry it.
Tips for Quick Drying Passion Fruit Jam
- Spread the jam on a tray and let it sun-dry for a strong sun (3 – 5 hours) for the best results.
- To dry the jam in the oven, place the jam on a tray and dry it at 100 degrees Celsius for 30 – 60 minutes while keeping the oven door slightly open.
After drying or sun-drying, let the jam cool and store it in a jar.
