- When buying beef intestines, you should prioritize purchasing directly at the slaughterhouse as it is the freshest, or you can buy them at the market in the early morning, avoiding intestines that have been kept for too long.
- When shopping, you should choose beef intestines that feel firm and thick. Additionally, you should observe the color of the intestines, selecting those that are uniformly white without any bruises to ensure food safety.
How to choose fresh pineapple
- Choose pineapples that are bright yellow from the crown to the bottom or have a few slightly green spots. These are ripe and sweet.
- Do not choose green pineapples, as they are unripe and sour.
- Short pineapples (round shape) have more flesh than long ones (long cylindrical shape).
- Opt for fruits with large and sparse eyes to retain the thick flesh after peeling.
- Select pineapples that are neither too hard nor too soft, and do not have mold or leaks on the skin.

How to prepare Boiled Beef Intestines

Prepare the ingredients
Slice one piece thinly, crush it, and peel and slice the other, cutting it into strips (to be used for dipping sauce and decoration). Cut the calamondin in half and squeeze the juice into the bowl of beef intestines.
Next, add a little water to the bowl of beef intestines, add half a crushed ginger root and the calamondin peel. Use lemon and ginger to rub the inside and outside of the beef intestines thoroughly to eliminate the fishy smell. Then rinse several times with water to ensure the intestines are clean.
Wash the green papaya, cut it in half, and remove the stem.
Tip: Keep the skin of the papaya, as it helps the boiling process of the beef intestines to soften faster.

Boil beef intestines with papaya
Place a pot of water on the stove, turn on the heat to medium. Heat until the water in the pot is gently boiling, then add half a papaya.
Add to the pot in turn 2 teaspoons of salt, 2 teaspoons of seasoning powder, 1/2 teaspoon of monosodium glutamate, and add 1/2 stalk of smashed lemongrass.
When the water in the pot begins to boil, add the beef intestines to boil. Boil for about 40 – 50 minutes until the beef intestines are cooked evenly and tender.
