How to choose fresh and delicious shrimp
- Fresh and good-quality shrimp have a clear, bright shell. Do not choose shrimp that have turned dull, with black legs or heads, which indicates old shrimp that are no longer good.
- Fresh shrimp have a straight shape, with tails curled together. The head and legs are still firmly attached to the body. Shrimp that have lost their heads or are curved are spoiled and should not be purchased.
- When holding the shrimp, if they feel firm, it indicates freshness; soft and mushy shrimp are spoiled.
- Fresh shrimp have the characteristic smell of seafood, not a foul or spoiled odor.
How to choose fresh and delicious bell peppers
- Choose bell peppers that are bright in color, firm, and heavy in hand, as these will be fresher and richer in nutrients.

Prepare vegetables
Wash the bell peppers, remove the seeds, and cut them into bite-sized cubes. Cut the onions into similar-sized pieces.
Cut the cucumber, remove the seeds, and slice it into bite-sized pieces.

Preparing shrimp
When you buy shrimp, wash them thoroughly, peel the shell, and devein the shrimp.
How to properly prepare and devein shrimp
- Step 1: Use your hand to pull the head away from the shrimp body.
- Step 2: Peel the shell from the legs of the shrimp upwards. When you reach the tail, hold the tail and pull the shell off.
- Step 3: Use a knife to make a shallow cut along the back of the shrimp to expose the vein. Carefully grasp the vein and gently pull it out.

Dusting shrimp with flour
After preparing the shrimp, marinate them with 1/2 teaspoon of salt, 1/2 tablespoon of pepper, then add the egg white of 1 chicken egg and mix well.
To avoid clumping, gradually add 2 tablespoons of cornstarch and mix evenly. Marinate the shrimp for about 1 minute to allow the flavors to absorb.
Before frying, take each shrimp out and coat it with the remaining 3 tablespoons of cornstarch. Let the shrimp rest for about 10 minutes before frying.

Frying shrimp and vegetables
Place a pan on the stove over medium heat, add about 100ml of cooking oil. When the oil is hot, add the prepared onions and bell peppers, fry briefly for about 10 seconds, then remove and let drain.
After briefly frying the vegetables, add the shrimp to fry. Drop the shrimp into the pan over medium heat, when one side is golden, flip to the other side. Fry for about 1 minute on each side, then remove the shrimp to let drain.
To make the shrimp crispy and tastier, adjust the heat to high, wait for the oil to be very hot, then add the shrimp for a second fry. Stir the shrimp evenly for about 10 seconds, then remove to let drain.
Tip:
- Briefly frying the vegetables helps them cook while still retaining their beautiful color.
- To fry the shrimp so that they are crispy and not oily, you should fry the shrimp in batches. Adding all the shrimp to the pan at once will cool the oil down and make it easier for the oil to soak into the shrimp.

Making the sauce
Place a pan on the stove over low heat, add 4 tablespoons of ketchup and 2 tablespoons of chili sauce, then stir well. When the sauces are blended together, add 125ml of filtered water and stir well.
Adjust the heat to medium, add 2 teaspoons of sugar, 1/2 teaspoon of salt, and 1 tablespoon of white vinegar, stir well and bring to a boil.
To thicken the sauce, dilute 1 teaspoon of cornstarch and add it to the sauce, stirring well.
