How to choose fresh beef ribs
- Fresh and delicious beef ribs are those with bright red meat, white fat, and the surface should not have any darkening or unusual small spots.
- When you press down with your hand, the beef ribs should feel firm, elastic, and not soft or slimy.
- You should avoid buying beef ribs if there is a strong foul smell, as this indicates that the ribs have been stored too long and consuming them could affect your health.
How to choose delicious chewy rice noodles
- Depending on your preference, you can choose fresh or dried rice noodles for today’s dish!
- For fresh noodles, you should select those that are bright white, not discolored in any unusual way, and when you press lightly, they should feel soft but not easily broken.
- For dried noodles, you should carefully observe the packaging and especially the expiration date!
- You should limit buying noodles that emit a musty or strong foul smell as these noodles have been stored too long and should not be used.

Prepare the beef ribs
First, with 2kg of beef ribs, wash them briefly with water to clean, let them drain or use a clean dry cloth to wipe the surface, then use a knife to cut into bite-sized pieces.
Next, place a pot on the stove with 1 liter of water, add the prepared beef ribs, half of the crushed ginger, and 1 teaspoon of salt, then blanch for about 7 – 10 minutes over high heat.
Once you see bubbles on the surface, turn off the heat, remove the beef ribs, and rinse them several times with clean water, then let them drain.

- Method 1: You can crush ginger, roast it until cooked, then rub it on the surface of the beef ribs for a few minutes.
- Method 2: Alternatively, you can rinse the beef ribs briefly with white wine for about 15 minutes.

Prepare other ingredients
You take a baking tray and put all the remaining star anise, cinnamon, cardamom, and ginger into it, place it in the oven, and roast at a temperature of 180 degrees Celsius for about 4 – 5 minutes. When the ingredients start to release their aroma, you turn off the oven and take the baking tray out to cool.
Then, you take the roasted ginger and crush it with a knife. Peel the garlic and then chop it finely.
Finally, cut off the roots of the scallions and coriander, wash them thoroughly, drain, and chop finely.
Tip: If you don’t have an oven, you can use a grill rack and roast it over charcoal or a gas stove! -
Marinate the beef
Next, place the briefly blanched beef ribs into a bowl along with 1.5 tablespoons of seasoning, 1 tablespoon of sugar, 1/2 teaspoon of five-spice powder, 1/4 teaspoon of annatto powder, and the entire amount of star anise, cinnamon, cardamom, and ginger that has just been roasted.
Use chopsticks to mix everything well and let the beef ribs absorb the seasoning for about 45 minutes.

Cooking Braised Beef Pho
You place a pot on the stove with 2 tablespoons of cooking oil and heat it over medium heat. When the oil is shimmering, add 1 minced garlic clove and sauté until fragrant.
Next, add the marinated beef ribs to the pot, using chopsticks to stir-fry for about 3 – 5 minutes, until the beef ribs are slightly browned, then add 2 liters of water and continue cooking for another 10 – 15 minutes.
When the water is boiling, reduce the heat to low and cook for another 30 – 40 minutes, then season with 2 tablespoons of fish sauce and 1 teaspoon of salt, stirring well again with a ladle.
After that, when the beef ribs are tender, taste and adjust the seasoning to your liking.
At the same time, place another pot on the stove with 500ml of water and bring it to a boil over high heat. Once the water is boiling, add a moderate amount of pho noodles and blanch for 2 – 3 minutes. When the pho noodles are soft, turn off the heat and transfer them to a bowl.
Finally, in that bowl of pho noodles, ladle in a little broth, add the beef ribs, green onions, and cilantro, and enjoy!
