How to choose fresh and delicious beef tongue
- To select delicious beef tongue, you should buy it in the morning, preferably at the slaughterhouse. When you bring beef tongue home, you need to prepare it before storing it in the refrigerator to maintain its freshness.
- Fresh beef tongue always has a bright red color, rosy and vivid appearance. Additionally, observe the part near the root, which should have a uniform white color.
- You should choose tongues that have a natural and distinctive fishy smell, without any strong foul or rotten odors, as this could indicate that the tongue has been slaughtered for a long time or treated with chemicals for preservation.
- Avoid choosing tongues that are dark in color, bruised, or have excessive lesions, as they will not be delicious and could affect health.
How to Prepare Beef Tongue Stewed with Carrots

Prepare the beef tongue
First, buy the beef tongue, wash it thoroughly, then place it in a pot to blanch with a little wine and a small piece of ginger cut into slices. Boil the beef tongue and soak it for about 5 – 7 minutes to clean off the slime and unpleasant odor.
After boiling the beef tongue, take it out to cool, then use a knife to peel off the skin from the tongue. Next, cut the beef tongue into bite-sized pieces and wash it again with water.
Tips to prepare beef tongue without odor:- Method 1: The most common method is to wash it with white wine, then rub salt all over the tongue and blanch for 5 minutes.
- Method 2: Smash lemongrass and boil it together with salt and the tongue for just 5 minutes to eliminate the odor.
- Method 3: Blanch the beef tongue with ginger and green onions for 5 minutes, then scrape off the outer membrane, which is also very effective.
- Method 4: Additionally, another common method is to boil the tongue for 5 minutes, then soak it in vinegar for another minute.
- Method 5: Besides that, blanch the beef tongue, then rub it thoroughly with lemon and salt, and wash until clean.

Marinate the beef tongue
Peel the shallots and garlic, wash them clean, then mince them and put them on a plate.
After cutting the beef tongue, place it in a bowl. Add 1 packet of beef stew seasoning, 2 tablespoons of sugar, 2 teaspoons of seasoning powder, 1 tablespoon of salt, 4 shallots, and 2 jars of shrimp paste to the bowl. Add 1/3 of the minced shallots and garlic to the bowl, then mix well to ensure the seasoning is evenly absorbed by the beef tongue.

Sauté the beef tongue
Add a little cooking oil to the pan, and when the oil is hot, add the minced shallots and garlic and stir-fry until fragrant. Once the shallots and garlic are golden and aromatic, add the marinated beef tongue and stir-fry over medium heat until the beef tongue is slightly firm. Stir the beef tongue for 5 minutes to allow the seasoning to penetrate deeply into the meat, then turn off the heat.
Tip: Sautéing the beef tongue beforehand will help it taste better and absorb the seasoning more. -
Prepare the vegetables
Peel and wash the onion, then cut it in half and slice it into thin wedges. Peel the carrot and cut it into bite-sized pieces; you can carve the carrot into flower shapes for a more attractive presentation. Cut the coconut to get the water, which will be used to sweeten the beef stew.

Stew beef tongue
Add the sautéed beef tongue to a large pot, pour in coconut milk, and simmer the beef over medium heat. When the mixture boils, reduce the heat to low and stew the beef tongue for 5 minutes for the coconut milk to soak in.
After about 5 minutes, skim off the foam and add water until it covers the beef tongue. When the water boils again, add the carrots and onions to stew together.
While waiting for the beef tongue to soften, mix 1 tablespoon of cornstarch with 20ml of water. When the beef tongue and carrots are soft, pour the mixed cornstarch into the pot. Stir well with a ladle until the beef broth thickens, then turn off the heat.
