    First, with the dried mushrooms you bought, soak them in water for 45 – 60 minutes. Once the mushrooms are soft, drain the water, rinse briefly with clean water, and let them dry. Then, remove the stems and chop finely with a knife.

    For the cassava root, peel it, wash it thoroughly, and let it dry. Next, chop the cassava root finely, while squeezing out the water with your hands.

    As for the green onions, remove the roots, wash them clean, let them dry, and chop finely. Finally, peel the shallots and garlic, and chop them finely along with the chili.

    • Additionally, when soaking in cold water, only soak for a maximum of 3 hours.

  • Mixing the batter

    Next, take a bowl and add 300g of rice flour, 150g of tapioca flour, and 1.3 liters of water, then use a ladle or a whisk to stir well so that the batter mixture is dissolved together. After that, cover it with plastic wrap and let the batter rest for about 1 hour.

    When you see the batter mixture has separated into 2 parts, gently use the ladle to remove the water on the surface.

    Finally, add back the same amount of filtered water that was removed, and use the whisk to stir again, and it’s done.

  • Stir-fry the filling

    At the same time, place a pan on the stove with 1 tablespoon of cooking oil over medium heat. Once the oil is hot, add 4 minced shallots and sauté until fragrant.

    Next, add 300g of ground pork, using chopsticks to stir-fry for 2 minutes, then add 20g of wood ear mushrooms and 300g of cassava, stir-frying for another 5 – 7 minutes.

    After that, season with 2 tablespoons of fish sauce, 1/2 tablespoon of seasoning powder, and 1/2 tablespoon of sugar, continuing to stir for another 3 minutes.

    When all the ingredients are soft and cooked, adjust the seasoning to taste, then add 2 green onion stems and 1/2 teaspoon of ground pepper, stir well again, then turn off the heat and transfer to a plate.

  • Making Fish Sauce

    You continue to place another pan on the stove with 2 tablespoons of sugar over low heat.

    Once the sugar has dissolved, add 3 tablespoons of water, 3 tablespoons of fish sauce, 2 cloves of minced garlic, and 2 chopped bird’s eye chilies along with 2 tablespoons of lime juice.

    Then, use a ladle to stir well for 2 minutes. Finally, season to taste, turn off the heat, and pour into a bowl.

  • Steaming Egg Rice Rolls

    You place a new pan on the stove over low heat. Then, use a brush to spread a thin layer of cooking oil evenly on the pan.

    Next, add 2 ladles of the batter mixture, spreading it evenly across the surface of the pan, then cover and steam for about 1 minute.

    After that, open the lid and simultaneously add 1 ladle of beaten eggs, spreading it evenly, then cover and steam for another 1 – 2 minutes.

    Finally, when the rolls are cooked, transfer them to a plate, and continue doing this until all the batter and eggs are used up.

    Tip: To prevent the egg from separating from the batter, you should steam the batter for about 1 – 2 minutes before adding the eggs right away!

  • Wrap and cut the pancakes

    Finally, place a piece of steamed pancake on a flat surface, then add a little of the sautéed filling, and use your hands to tightly roll the pancake. Keep wrapping the pancakes until you run out of pancake and filling!
