Ingredients for Rice Paper Rolls from Leftover Rice For 4 people

Leftover rice 50 gr Rice flour 100 gr Tapioca starch 50 gr Potato starch 50 gr (or corn starch) Ground pork 300 gr Wood ear mushrooms 100 gr (chopped) Chili 1/2 tablespoon Shallots 3 tablespoons (finely chopped) Fish sauce 1.5 teaspoons Lemon juice 1 tablespoon Green onion oil A little Fried shallots A little Cooking oil 2 tablespoons Common spices A little (salt/ sugar/ pepper)

  • You can buy pre-minced pork at the market and then process it, but it will be difficult to check the quality of the meat. It is best to buy whole pieces of pork and grind them yourself with a meat grinder to ensure safety and quality when using.
  • Fresh pork will have high elasticity and firmness. You can press the meat with your hand to check; if the meat does not leave an imprint and does not stick to your hand, then it is good meat. Conversely, pieces of spoiled meat will not return to their normal state right away when pressed.
  • Good meat will have a bright red or dark red color, shiny, and a dry exterior.
  • If you see the meat showing gray, brown, dark red, or light green colors, or if it is slimy, absolutely do not buy it. Because these are signs that the meat has spoiled.
  • In addition, pork raised with lean meat enhancers will have a dark color, red spots on the skin, and a fishy smell compared to clean pork.

How to make Rice Cake from leftover rice

  • Make the filling for the rice cake

    Heat a pan on the stove with 2 tablespoons of cooking oil. When the oil is hot, add 3 tablespoons of minced shallots and sauté until fragrant.

    Next, add 300g of minced pork, 1/3 teaspoon of salt, and 1 teaspoon of sugar. Stir-fry the meat over medium heat until cooked.

    Then, add 100g of finely chopped wood ear mushrooms and continue to stir for another 5 minutes until the mushrooms are cooked.

    Finally, season with 2/3 teaspoon of fish sauce and a little ground pepper, stir the filling mixture one more time to finish.

  • Blend the leftover rice and mix the rice flour

    Put 50g of leftover rice and 400ml of water into a blender, then blend for 1 – 2 minutes until the rice is finely pureed.

    Next, add 100g of rice flour, 50g of tapioca flour, 50g of potato starch (or corn flour), the pureed leftover rice mixture, and 250ml of water into a bowl. Use a whisk to stir until the flour dissolves and the mixture is smooth.

    Then, strain the mixture through a sieve for a smoother consistency, then add 1/3 teaspoon of salt and 3 teaspoons of scallion oil. Stir the mixture well one more time to complete.

  • Make rice rolls

    Place a pan on the stove, and use a brush to evenly spread a thin layer of scallion oil. Then, spray water into the pan 4 – 5 times. Cover with a lid and heat over medium-low heat for about 3 – 5 minutes.

    Next, scoop a ladle of batter into the pan and spread it evenly, spray water on top of the rice roll 4 – 5 times, and cover tightly for 45 seconds for the rice roll to cook, then gently take the rice roll out onto a plate.

    Repeat the same process until all the remaining batter is used.

    Tip: Before pouring the batter into the pan, remember to stir well so that the batter mixture is more blended!

  • Rolling the filling

    Put a little filling of ground meat and wood ear mushroom into each piece of rice paper, then fold the edges neatly and roll it up evenly.

    Tip: To prevent the rolls from sticking together, you can spread a layer of scallion oil on the outside of the rolls!

  • Prepare the dipping sauce and finish

    In a bowl, add 1 tablespoon of sugar, 4 tablespoons of water, 1 tablespoon of fish sauce, 1 tablespoon of lime juice, and 1/2 tablespoon of minced chili. Stir well to combine the mixture completely.

    Arrange the rolls on a plate, top with a bit of scallion oil and fried shallots, and you can enjoy them right away.
