- You can buy pre-minced pork at the market and then process it, but it will be difficult to check the quality of the meat. It is best to buy whole pieces of pork and grind them yourself with a meat grinder to ensure safety and quality when using.
- Fresh pork will have high elasticity and firmness. You can press the meat with your hand to check; if the meat does not leave an imprint and does not stick to your hand, then it is good meat. Conversely, pieces of spoiled meat will not return to their normal state right away when pressed.

Make the filling for the rice cake
Heat a pan on the stove with 2 tablespoons of cooking oil. When the oil is hot, add 3 tablespoons of minced shallots and sauté until fragrant.
Next, add 300g of minced pork, 1/3 teaspoon of salt, and 1 teaspoon of sugar. Stir-fry the meat over medium heat until cooked.
Then, add 100g of finely chopped wood ear mushrooms and continue to stir for another 5 minutes until the mushrooms are cooked.
Finally, season with 2/3 teaspoon of fish sauce and a little ground pepper, stir the filling mixture one more time to finish.

Blend the leftover rice and mix the rice flour
Put 50g of leftover rice and 400ml of water into a blender, then blend for 1 – 2 minutes until the rice is finely pureed.
Next, add 100g of rice flour, 50g of tapioca flour, 50g of potato starch (or corn flour), the pureed leftover rice mixture, and 250ml of water into a bowl. Use a whisk to stir until the flour dissolves and the mixture is smooth.
Then, strain the mixture through a sieve for a smoother consistency, then add 1/3 teaspoon of salt and 3 teaspoons of scallion oil. Stir the mixture well one more time to complete.

Place a pan on the stove, and use a brush to evenly spread a thin layer of scallion oil. Then, spray water into the pan 4 – 5 times. Cover with a lid and heat over medium-low heat for about 3 – 5 minutes.
Next, scoop a ladle of batter into the pan and spread it evenly, spray water on top of the rice roll 4 – 5 times, and cover tightly for 45 seconds for the rice roll to cook, then gently take the rice roll out onto a plate.
Repeat the same process until all the remaining batter is used.
