How to make Yogurt Drink

Pour milk, hot water, and condensed milk into the pot
First, pour hot water and pasteurized milk into the inner pot of the rice cooker, then place the inner pot into the rice cooker, add condensed milk to the pot according to your family’s taste, you can add from 3 to 5 tablespoons.
Select the “Cook” mode to heat the milk but only heat it to a temperature of 80 – 90 degrees Celsius, do not let it boil. Stir the milk while heating to avoid it burning.

Add the starter culture to the milk
The yogurt used to make the starter culture must be liquid, flowing like a stream, not solidified because cold yogurt added to hot milk can easily experience thermal shock, making it difficult to dissolve in hot milk.
Before adding the yogurt to the pot, you need to take the pot out and let it cool to a temperature of 50 degrees Celsius after heating it to a temperature of 80 – 90 degrees Celsius, slowly add the starter culture to the pot, stirring gently and evenly to blend the solution together.

Incubate the milk
Place the inner pot into the rice cooker and incubate naturally for 6 – 12 hours, without plugging in the rice cooker.
After 5 hours, check if the milk poured out has a sour taste and a smooth consistency, then you can take the yogurt out to use immediately or leave it for a few more hours for it to achieve the desired sourness and consistency.

Add a little strawberry or your favorite fruit to the Yakult drinking yogurt to enhance the flavor.
To check the temperature of drinking yogurt, please note
- The milk with a temperature from 80 to 90 degrees Celsius is hot milk with steam rising. When you take a little milk and touch it to your hand, if it feels very hot but you can still tolerate it, then the milk is ready.
- After boiling the milk, let it cool at room temperature for about 20 minutes. If it feels warmer than the temperature of a baby’s bath, then the milk has reached a temperature of 50 – 60 degrees Celsius.
- To incubate the milk, the incubation environment temperature should not exceed 55 degrees Celsius. Do not incubate at 30 degrees Celsius or lower, as the milk will ferment slowly, resulting in a longer incubation time. If incubated at 45 degrees Celsius, the milk will be ready after 7 hours.
