How to Prepare Pickled Eggplant Kimchi

  • Soak the eggplants

    Cut off the stems of the eggplants, soak them in water with a little salt to prevent browning, then rinse well.

    Peel and crush the garlic.

    Boil about 1 liter of water, add salt and garlic, and stir well. Place the eggplants in a large jar, pour in the cooled brine, making sure the water is just enough to cover the eggplants. Seal tightly for 7 days.

  • Prepare the spice mixture

    Peel and thinly slice the ginger. Mix 300ml of cooled boiled water with 1 tablespoon of fish sauce and 200g of sugar, stirring until completely dissolved, then bring to a boil. Wait for the mixture to cool, then mix it evenly with ground chili and sliced ginger.
