How to make Vegetarian Water Spinach Salad

Prepare the ingredients
Pick the tender parts of the water spinach, wash thoroughly, drain, and cut in half. Mix a little salt and sugar in boiling water, then briefly blanch the water spinach and remove it to drain.
Cut the tofu into bite-sized pieces, then fry until crispy.
Wash the bell pepper and slice it into thin strips.

Mix the salad
In a bowl, combine 4 tablespoons of sugar, 1/3 tablespoon of seasoning, 1 tablespoon of vegetarian fish sauce, 1 tablespoon of lime juice, and a little chopped chili. Then stir well to combine the mixture.
Add the water spinach, fried tofu, tofu skin, sliced bell pepper, a little sesame salt, and the dressing into a bowl, then use your hands to mix well so that the ingredients absorb the seasoning. Serve the salad on a plate, sprinkling some crushed peanuts on top to finish.

Final Product
The salad dish after completion retains the crispness of the water spinach, with a rich sweet and sour flavor from the dressing, served with crispy fried tofu and fatty fried tofu skin.
