How to choose fresh chicken

  • To choose good chicken, select chicken that has naturally pink-red meat, not too pale or too dark. Especially, the chicken meat should not have bruises or blood clots. Parts of the meat that are slightly pale or turning darker gray indicate that the chicken had died before being processed.
  • If purchasing pre-packaged meat, you should carefully observe the expiration date and packaging date. Check if the openings of the bags are intact.
  • For this recipe, you should buy pre-prepared chicken thighs for better cooking results. You should purchase chicken thighs from reputable brands that produce pre-packaged chicken sold in trusted supermarkets.

How to choose good tomatoes

  • For tomatoes, choose those with a bright red outer skin, evenly colored all over. The outer skin should be intact, without scratches, and firm to the touch, indicating fresh tomatoes.
  • Natural ripened tomatoes usually have a mild fragrance that can be easily detected when smelled. In contrast, tomatoes that have been artificially ripened have no aroma at all.
  • You should select tomatoes that still have their stems attached, with the stems still fresh and not withered. Naturally ripened tomatoes typically have their stems tightly attached to the fruit.

Paprika

  • Paprika is a type of red powder made from bell peppers, and it is also made from a type of tomato pepper and supplemented with some other peppers that have a pungent flavor profile.

How to make Chicken Tikka Masala Curry

  • Make the curry sauce

    Toast 1 tablespoon of coriander seeds, 1/2 teaspoon of fennel powder over medium heat for 2 minutes.

    Then add the toasted mixture into a blender and blend at medium speed, when the mixture is finely chopped, add 1 tablespoon of garam masala powder, 1 teaspoon of turmeric powder, 7 cloves of garlic, 1/4 piece of ginger, 2 red chilies, 60ml of water, 1 tablespoon of cooking oil, and blend until the sauce mixture is smooth and thickened.

  • Prepare and marinate the chicken

    Wash the chicken thoroughly, remove the skin and bones, then rub with salt to remove all dirt and slime. After that, rinse with water again and cut into bite-sized pieces.

    In a bowl, add 225g of yogurt, 2 tablespoons of the curry sauce just made, 2 teaspoons of salt, then add the chicken and mix well to coat the chicken evenly with yogurt and curry sauce. After that, cover the bowl tightly with plastic wrap and place it in the refrigerator for 20 minutes to let the chicken absorb the seasoning.

    Tip: If you let the chicken marinate in the refrigerator overnight, the chicken will absorb the sauce better, and each piece will be tender and delicious, not mushy when cooked.

  • Pan-fry the chicken

    Add 1 tablespoon of cooking oil to the pan and then add the marinated chicken to pan-fry over medium heat for about 3 – 4 minutes until the chicken is firm before cooking.

  • Cook the curry

    Boil the tomatoes in a pot of boiling water for about 5 minutes until soft, then put them into a blender, and blend at high speed until the tomatoes are pureed into a liquid form. Next, strain the tomatoes through a sieve to remove the skin and seeds.

    In the same pan where you sautéed the chicken, add 56g of unsalted butter and melt it. Then, add 1 diced onion, the curry sauce mixture, and the pureed tomatoes, and sauté over medium-low heat for about 10 minutes.

    When the mixture starts to thicken, add 300ml of heavy cream and the chicken, then simmer for about 10 – 15 minutes over medium-low heat. When the chicken is tender and the sauce in the pot is slightly thickened, turn off the heat.

    Spicy Chicken Tikka Masala is fragrant, with a rich and thick sauce, and the chicken is incredibly tender and sweet. It would be wonderful to enjoy the chicken curry with hot rice and a few cilantro leaves.
