How to make Yogurt – yaourt

  • Dissolve condensed milk and fresh milk

    Dissolve 200gr of condensed milk with 1 liter of fresh milk, taste the sweetness to suit the family’s palate and heat the mixture on the gas stove until it reaches about 40 degrees C (put your hand over the mixture to feel warmth, touching it should not be hot), then turn off the stove.

  • Prepare the milk mixture

    Add 200ml of yogurt to the warm milk mixture, stir well until the yogurt is completely dissolved. If you like vanilla flavor, you can add it right now.

    To make the yogurt smoother after incubation, you can strain the mixed mixture through a sieve. Then pour the mixture into the jars or containers that have been prepared.

    Note: You should scald the jars or containers with hot water to clean them and let them dry completely before adding the yogurt. If the jars or containers are not clean enough, it will kill the yeast, causing the finished yogurt to become slimy.

  • Yogurt incubation

    Incubating yogurt requires maintaining the necessary temperature for the starter culture to work. To achieve this, it’s essential to ensure the quality of the container used for yogurt incubation.

    Place the yogurt jars into the container, pour warm water (about 50 degrees Celsius) into the container to a level that submerges half of the jars, and cover the surface with a warm towel. Seal the container tightly and place it in a cool place for about 6 – 8 hours or overnight (if doing it in the evening).

    With plastic containers, it’s important to check regularly; if the water cools down, add more hot water to maintain the necessary warmth for the starter culture to function. When adding water, do it gently to avoid the yogurt from becoming too loose.

    Incubating yogurt in the oven: Preheat the oven to 100 degrees Celsius for about 5 minutes to warm it up, then turn it off. Place the tray with the yogurt jars in the oven. Close the oven door tightly and incubate for 6 – 8 hours or overnight. After about 3 hours, turn the oven on for about 3 minutes, then unplug it.

    This method does not require adding more hot water and ensures the warm environment necessary for the starter culture to work best.

  • Refrigerate

    After the incubation period is complete, and the yogurt has set, place it in the refrigerator.

    The yogurt will have thickened with a smooth surface; if the thickness is adequate, when tilting the jar, you will see the yogurt maintains its state without flowing or spilling out of the jar.

    You can try the finished yogurt to see if the fermentation level is as desired; if it’s not sour enough, you can increase the fermentation time or add more starter culture next time. Store the yogurt in the refrigerator and use it gradually.

    The yogurt will continue to ferment even when stored in the refrigerator. Therefore, it should be consumed within a short period to ensure the sourness is just right and tastes better.

    Yogurt can be enjoyed with fruits or blended with ice to make a delicious, refreshing, and nutritious drink for the family.

  • Preparation of ingredients

    Take unsweetened milk and condensed milk out of the fridge and let them cool for about 10 – 15 minutes before processing so that the yogurt does not become lumpy or curdled.

    Then, pour all of 1 can of condensed milk into a large pot. Next, add 1 can of yogurt into the pot and stir well, then continue to add 440ml of unsweetened milk into the pot, using a spoon to stir until the mixture is even and smooth.

  • Making Yogurt

    Place a pot on the stove and boil 550ml of water. After the water boils, slowly add the water into the yogurt mixture prepared above while stirring continuously until the mixture is fully dissolved.

    Next, strain the mixture through a strainer to achieve a smooth yogurt, pour the strained yogurt back into the pot, then cover the pot with a piece of cloth and put the lid on.

    Tip: Using a cloth to cover the pot ensures that the steam is absorbed by the cloth without condensing on the lid and dripping into the mixture.

  • Fermenting Yogurt

    Place the pot in a dry, ventilated area, avoiding movement, and let it ferment for about 12 hours. You can wrap an additional cloth around the pot to ensure the best fermentation quality.

    After completion, the yogurt will be extremely smooth, creamy, and fragrant with a perfect flavor, a sweet and tangy taste that is very enjoyable. You can eat this dish with fruits or use it to make smoothies.
