How to make White Pearls

Boil the jelly mixture
Heat 1 liter of simmering water (note not to let it boil vigorously), then add 1 teaspoon of jelly powder and stir well. Next, mix sugar with 4 teaspoons of soft jelly powder.
Add the sugar and soft jelly mixture into the pot and stir well until dissolved. Then, simmer until the mixture thickens slightly.

Shape the pearls
Then pour the jelly mixture into a clean bottle with a pointed tip (like a pho sauce bottle and must be heat-resistant).
Tip: In case you do not have a heat-resistant bottle, let the mixture cool slightly but still warm so that it does not solidify. We need to do this step so that when we pour the mixture into the bottle, the bottle does not shrink.
Prepare a large bowl of ice water, then pour about 1/2 cup of cooking oil so that the oil separates from the water.
Drop the jelly mixture into the bowl, and the jelly droplets will form into evenly round balls as they pass through the oil layer, then sink into the ice water to solidify, creating the finished tapioca pearls.

Completion
You take the tapioca pearls out and rinse off the oil, then place the tapioca pearls into a small bowl, mixing in some sugar and a little lemon juice to enhance the flavor.

Distinguishing Matcha Powder and Green Tea Powder
- Matcha powder and green tea powder are both made from fresh green tea buds, pure and high quality, but they differ in composition ratios, so they are actually not the same.
- Matcha powder has a mild aroma, bright green color, fine texture, and a bitter taste at the tip of the tongue followed by sweetness.
- Green tea powder has a dark green color, slightly yellowish, does not dissolve in water, has a little astringency with a sweet aftertaste, and does not have the strong, sweet aroma like matcha powder.

How to make Matcha Caramel Dessert

Making green tea caramel cake
Put 50gr of sugar, 10ml of plain water, and 20ml of lemon juice into a pot to make caramel. Cook until the mixture turns a golden brown color and starts to caramelize, then turn off the heat. After that, pour the caramel into a mold to make the cake.
Crack 3 eggs into a separate bowl. Take 2 egg whites and 3 egg yolks into a bowl along with 15gr of sugar and 20gr of condensed milk. Stir well until the 3 ingredients are combined.
Next, heat 400ml of unsweetened fresh milk over medium heat until it is slightly warm, then turn off the heat and mix it with the egg mixture and stir well.
Add about 15ml of the freshly heated milk to mix with 3gr of matcha powder. Dissolve the matcha milk mixture into the egg milk mixture.
Filter the mixture through a sieve into a separate pot and then pour it into the cake mold to steam for 20 – 25 minutes until the cake is cooked.
Tip: To make the cake cook faster, you should place a layer of cloth between the pot lid to reduce steam escape. -
Making matcha jelly
Mix 5g of agar powder with 100g of sugar, dissolve the mixture in 100ml of boiled water.
Next, dissolve 5g of matcha powder in 15ml of boiling water and add it to the pot with the sugar and agar mixture, stirring continuously while heating to blend the mixture and prevent clumping.
Scoop out 1/2 of the mixture into a separate container to create two different types of jelly. For the remaining part, add 150ml of unsweetened fresh milk and stir until combined, then pour it into a separate container to cool or place it in the refrigerator.
After the jelly sets, for the jelly without milk, use a grater to create jelly strands. For the part with fresh milk, use a knife to cut it into thin pieces, about the length of 2 finger joints.

Making matcha coconut milk
Place a pot on the stove, add 300ml of water and 100g of sugar to the pot for about 2 – 3 minutes until the water is warm.
Then, add 200ml of milk, 160ml of coconut milk, 30g of condensed milk, 50ml of vegetable cream, and 20g of matcha to the pot. Stir well until the mixture is fully dissolved.

Place the caramel pudding on a plate, add some white tapioca pearls. You place the matcha jelly on the plate along with the pudding. Finally, pour the matcha coconut milk mixture over the pudding and enjoy.
