Split green beans 200 gr Lychee 300 gr Rock sugar 300 gr Water 2 liters

How to choose fresh and delicious lychee

  • Lychees that are pink-red in color, round, smooth-skinned, and have a lot of flesh are usually delicious and ripe. You should not choose lychees that are prickly and still green as they are very sour.
  • Additionally, you should pay attention to choosing bunches of lychees that have stems attached to the fruit and still have green leaves, as these fruits are usually freshly harvested and retain their sweetness.
  • Good lychee should feel slightly soft when held, and when touched, it should have a certain elasticity.
  • If the lychee has thick, soft flesh, translucent white color, juicy, and easily separates from the seed, then it is delicious and sweet lychee.

How to make Mung Bean Lychee Dessert

  • Prepare the ingredients

    First, soak the mung beans in warm water for 2 – 4 hours to allow them to expand. After soaking, rinse the beans clean and let them drain.

    Peel the lychee and separate the seeds from the flesh. Then rinse again with water.

  • Cook the mung beans until soft

    Place the mung beans in a pot, then pour in 2 liters of water, and bring the pot to a boil for 5 minutes.

    When the water boils, reduce the heat and continue to cook the mung beans for another 10 minutes until they are soft.

    Tip: While cooking, remember to skim off the foam to make the dessert look more appealing!

    After 10 minutes, add the lychee flesh into the pot and stir well.

    Continue to cook for about 2 more minutes, then add 300g of rock sugar into the pot and stir well until the sugar completely dissolves.

    Keep simmering for another 2 minutes, stirring continuously for the lychee and mung beans to absorb the sweetness.

    At this point, when you see the mung beans just soft and the lychee flesh floating on top, taste and adjust the seasoning as desired, then turn off the heat.
