Prepare the ingredients
After buying the beef, wash it clean, let it drain, and then use a knife to cut it into thin slices.

You can put 200g of shrimp paste into a bowl (the type of bowl used for rice) for easy seasoning while cooking.
For the pork bones, wash them clean and let them drain.
Shallots and garlic, after buying, peel them, and wash them clean with water. Choose 2 shallots and 2 cloves of garlic to finely chop.
For the pumpkin shoots, sweet potato leaves, and water spinach, remove the old and rotten shoots, keeping the young ones. Then, wash these vegetables with clean water and let them drain.
Cut off the roots and leaves of the lemongrass, wash it again with clean water, let it drain, and crush it.

Cooking Shrimp Paste
You put a non-stick pan on the stove, add 2 spoons of cooking oil into the pan, turn on the heat and wait for the oil to heat up. Next, add minced shallots and garlic to the pan and sauté evenly.
When the ingredients turn golden, add all 200g of shrimp paste into the pan and stir for a few seconds. Then, pour about 2/3 of a can of 7 Up into the pan and gently stir to combine the shrimp paste and 7 Up.
When the mixture in the pan starts to boil, turn off the heat and prepare another pot. Next, place the pot on the stove. Use a slotted spoon on top of the pot. Then, pour the shrimp paste from the pan into the pot through the slotted spoon to filter out any residue left in the shrimp paste.
Pour 1 liter of pork bone broth (broth that has been simmered for 3 hours), add smashed lemongrass, 1/2 teaspoon of monosodium glutamate, and 2 teaspoons of sugar into the pot and stir well. Next, add 3 shallots, 3 garlic cloves, 2 teaspoons of chicken powder, and 1 teaspoon of chili powder to the pot to enhance the dish’s flavor.
While waiting for the broth to boil, you can arrange the slices of beef on a plate with a bit of fried shallots and garlic sprinkled on top.
When the broth has boiled, add 1 bowl of fried pork fat (the type of bowl for dipping sauces) into the pot to cook for a few seconds and then turn off the heat.
